Looks delicious, I love cauliflower and it's honestly one of the most nutrition packed veggies out there.
I would swap hummus in the sauce for hight protein cottage cheese and add some Parmigiano to make it more protein heavy :)
BTW have you tried air frying the cauliflower instead of baking? It should fit into basket style airfryer, and definitely would cut on some time and electricity

could you give the protein content in an estimated number?
Yeah i mean. I'm vegan and that looks pretty tasty, but it doesn't have that much protein
If you eat the whole thing (of course you would) assuming the cauliflower is about 600g, you got 15g of protein from the cauliflower alone. Beans, nutritional yeast and hummus will add probably around 8-10g.
So te entire thing is between 22-25g of protein.
What is the benefit of nutritional yeast and where do you find it in the store?
One has to give up a lot of life to spend time making all this stuff. I get the theory, but I also get algebra….
