Ketogenic Number Cake

This cake is basically two layers of large cookies with mascarpone cream filling and decorated with berries and meringue.
It is really fun to make and you can decorate it as you please and it is always very impressive and beautiful.
Ingredients:
for the meringue:
2 egg whites
2 tbsp powdered erythritol
½ tsp cream of tartar
½ tsp vanilla extract
for the dough:
5 cups almond flour
½ cup powdered xylitol
½ tsp xanthan gum
7 oz butter
tsp of lemon zest
2 eggs
for the cream:
17oz mascarpone cheese
4 tbsp powdered xylitol
17oz heavy whipping cream
and add berries of your choice to decorate
about 7 net carbs per slice
