" AAM KA ACHAR " Bajias Cooking

  • Ingredients! 2tbs kalounji/nigella seeds, fenugreek seeds, whole black pepper, black mustard seeds, chilli powder, crushed chillies, fennel seeds/saunf each. ½ tbs turmeric powder and 1tbs salt. 1tbs full turmeric powder, 2tbs salt and 2 whole garlic. Raw mangoes 1kg. Mustard oil/sarson ka tel.
    Mustard seeds are in black and golden colour. If you wish you can use 1tbs golden and 1tbs black.

    khas karake sirf sarsonka tel hi dhuva anetak garam karate fir gas band karake use pura room temp pe lake fir acharme dalate.mai indiase hu.aapaki sabhi recipes hame bahot pasand hai ab may sada tel dalke dekhungi khudahafij

    Bajia appki her recepie bahut achi hoti hai liken iss tarha ki recipes bahut hi ziyada achi hain. Appka oven mein achar sokhnay ka idea bahut acha hai please achar ki aur recepies bhi bataien. Humaray yahan Mango nahi udhtay issi lea kairi nahi milti please gajar ka achar bhi bata dain

    Seems like original one. As the last part says oil me he rehne den. We bought shikarpuri lasoore ka achar and jo part oil se bahar hota tha us area me 12 hours me he fungus ajati thi. Thanks for sharing. Will try it soon

    no, lemon may spoil it has short life in achar you can add green chillies and lasoora

    From what I heard, mustard oil has to be heated until it starts smoking and cooled down before using. This way the strong flavor goes away. Also, it's best not to leave acidic items, like mangos, in metal bowl as it may react. It is better to use a glass bowl.

    bajia, is it okay to use canola oil? and if u r making garlic or carrot pickle do u have to dry thm under the sun too?

    15 min oven on ker ke off ker do, 5 min off kerne ke baad us main cheez wali tray rakh do. sara din woh oven main he rakhi rahe, sham tat sab thanda ho jaye ga. raat tray nikalo oven phir germ karo 10-15 min aur tray rakh ker so jao, phir subho yoonhe

    excellent, it tasted exactly like the home made ones we get in Pakistan, though I added green chilies and lemon to the mixture too. The ladies in my family are flabbergasted and jealous :)

    Nice traditional recipe. When I bought Mustard Oil here in uk, it says ''EXTERNAL USE ONLY'. What does that mean? Can I use it in Achar?

    This achar looks delicious I have been looking for a Pakistani achar recipe for a while and yours looks the most authentic Would it be possible to use other vegetables like lemon carrots etc for this recipe as well or would that not work.thank you.

      lemon and carrots have plenty of water, if you add that it may get fungus

    Nahi, aur kuch na zaya karo :) Eak tukra nikal ke mustard oil se dho ke taste karo, agar aam karwa nahi hai to sara masale ko kikal ke dho do, lekin agar aam karwa hai to phaink tho :)
