A good recipe indeed. This tastes good also with Otaheita Apple ( Amra in Bengali) and starfruit (kamranga in Bengali). Butttttt nothing like raw mango. Just two more variations I wanted to share. By the way, I am surrounded by people who do not think India is a country of snake charmers only. I get respect as I represent India, which contributes to research and technology. I get respect as I represent a country which developed some technologies which made it Elite. Thanks for sharing.

My Aunty used to make it with the leftover mangoes after making mango pickle. We used to call it 'Heeng ka aachaar'. Tastes yum but can have v little as asafetida is v strong.

Only that other recepies are so different, for example, they tell you to put the mango in salt and drain out the water, and then put it in the sun for days, and afterwards then mix it with spices. My question is, can I do this recipe of yours but put more spices like grinded cummin and other spices? Can I do this recipe adding olive oil? If I put more spices will it go bad and not last one year?

It needs more salt which acts as a preservative.For 1 kg mango use about 150 to 200 grams salt .It stays good for years.
