Becky, I was a professional Baker for many years and if you take the parchment paper and crinkle it up into a tight ball then smooth it out, it will fit any pan you wish without fighting you to straighten out.❤️

Hi, Becky, you know what, we have honeycomb candy in Taiwan! In my grandma' time, there was scarce of food supplies. Sugar was treasure at that time. People will put a tea spoon of sugar in a serving spoon. When the bubbles come out, then put a pinch of baking soda and let it cool, just like honeycomb! It was fun and satisfied for the kids in the old day! However, it's hard to find it now in Taiwan!
I don’t know if I ever mentioned but last year my grandson who was 4 at the time and I watched the Valentine treat episode. Ever since that day you have been the marshmallow lady. He has watched it over and over again. Can’t wait to show him this episode. Safe travels on your deliveries. ❤❤❤

I love the fact that you're always real with us. If you're not making mistakes in the kitchen some times, are you really cooking? 🤔 Your love language is what you create/prepare with your hands and out of your kitchen. We can easily buy, but love shown by time spent and the works of your hand speaks volumes! Like remembering your postal workers, the crew that's building your garden in the cold, a sick friend or family member that's unable to prepare a meal for their family. Even down to sharing your bounty from your garden! That's some of the many reasons I can't stop watching you! Also, It's educational!😄❤
I made candy a lot with my mom growing up in the 90's. She taught me the old fashioned way with a cold cup of water and testing the candy with soft ball/hard crack, etc. I'd watch cooking shows and wish so hard we had a candy thermometer. When I was setting up my own kitchen I got a candy thermometer and was so happy.... except I never use it...I found I prefer the old fashioned way to a candy thermometer 😅

My mom rarely eats sweets, the only candy I have ever seen her eat is Peppermint Patties and Junior Mints. So please trust me when I say that her homemade version she made when I was growing up were DELICIOUS-and made with mashed potatoes!!! I need to ask her if she still has the recipe, because I need to try them as an adult to see if they were as tasty as I remember. If not, I’ll be trying your recipe.😂
When you were using that wooden spatula to mix and scrape out the first dessert I was screaming use a silicone one and get everything out of that bowl 😂 I hate wasting stuff in bowls when it just needs the right spatial to scrape it out

Becky, when I’m mixing flour in my kitchen aid I always take a tea towel and drape over the top of the mixer and bowl for the first few seconds of mixing and that helps keep me from making a mess with the flour.
I have a little tip for you to easily line a container with parchment paper. Dampen the paper a bit and scrunch it up. Then you can easily put it in your container and it will stay in place. I love watching your videos.

Here in Finland (and I believe most of Scandinavia) valentines day is called ystävänpäivä/vändag or "friend day", so on this day we celebrate friendship by practicing kindness towards both strangers and loved ones, maybe make a special dinner together with your family or call up a friend you haven't spoken to in a while. A simple way a lot of Finns celebrate friend day is to literally just take a second and hug your friends and family! I remember as a kid in school we used to hug our classmates on the morning of/close to valentines day and compliment them or just say something nice to let them know we appreciated them. The romantic/americanized stuff has slowly seeped into our stores, we never used to have heart-shaped chocolate boxes or teddy bears before, but for us Finns it really isn't a commercial holiday or something that's only for couples. I know I'm biased lol, but I think our approach to valentines day is the way to go! Not all love is romantic, and ones love for friends and family is absolutely worthy of celebration. And friendship and kindness is always something to celebrate!
Before Christmas, I learned how to use my instapot as a double boiler. You put 2 cups water into it, turn on saute. When it starts to have small bubbles, turn to "keep warm", place a bowl over the instapot, that doesn't allow steam to get out. I like using stainless steel for this. I melted chocolate for several candies, pretzels, etc. If I got too tired, I'd just turn it off, let it cool, cover the bowl (my bowls have lids), and started again the next day. I never had to put more water in the installer and it always measured 2 cups! It changed my life!

Becky, you need to use different measuring cups for liquids vs. solids. They do make a difference! Especially when making batches that are sized up from original recipes (doubled or tripled, etc.). Plus 3T is 1/8 Cup.
Omg I have so much to catch up on. I've been home for a month now recovering from so much and I really missed your video's. I spent 3 weeks in the hospital. I went in around December 29th, got my surgery on Jan 9th Which I should have had my surgery on the 5th but I failed this stress test. So my surgeon would Operate without approval from the heart doctor, so that pushed it till the 9th. Along with that my mom went in the hospital and passed away on the 11th of Jan. I got out of the hospital on my birthday Jan 13. To be able to say a proper good bye to my mom. I'm so glad to be getting back to my happ place. Thank you Becky😊 💓
I know this refers to a previous video, but I have a tip to share with you. When you couldn't locate your muffin tin? When I got rid of a lot of extra pans a few years ago, I actually got rid of ALL standard size muffin tins. I use a sheet tray with canning rings when I make cupcakes or muffins. The canning rings hold the paper liners in place. As a bonus, you can fit more on the sheet trays. Very helpful if you are baking quantity. Love your vids & Congrats on your sweet one. A tip for getting parchment paper into baking dishes (I learned this from @mina_rome!) is to get the parchment paper damp, crumple it into a ball, and then spread it back out again into your dish. It becomes so much easier to work with and doesn't spring back up out of the dish like it does when it's fresh out of the box, and it's a lot easier/faster than folding or cutting the paper
Oh my! Pouring that hot sugar in the trash can was hysterical! Yes, making those candy recipes that have crucial temperatures for different stages take your constant supervision! I love honeycomb candy!

I grew up in Central California. We would always go to the Central Coast (specifically the Morro Bay/San Simeon area). My dad always bought me chocolate covered honeycomb, but we called it seafoam too!
Honeycomb was my dad’s favorite too! In my 20’s I started making it for him. I was so glad to be able to give him that favorite from his childhood. He’s been gone over 20 years now, and I haven’t made it since. Now I want to try again. The nougats are cute! Love peppermint patties, so may have to try making those. I have no family close and don’t know if any would ship well, but might try. Thanks!!

I often roll sugar cookies in sprinkles. Using a smaller, but much deeper container and shaking them back and forth to coat is less annoying than rolling, to me at least. 😊
I love every single video! You motivate me to cook at home! One tip I want to share with you - if you crumple up (and then un-crumple) your parchment paper first, it fits into baking dishes soooo much easier!
You can dip the cookies or paint them with red food coloring/water, then dip them in sugar and the sugar goes red and the cookies get soooo yummy!!! We do that with christmas cookies… You bake the cookies first, then do this. 🤗
I work in a Bakery where we color our own sugar. Put sugar in a plastic bag (regular white or course white) put on a few drop of food coloring. Close the bag and shake. Add more color if needed. Pour the sugar out onto a parchment lined pan. Tap to even it out. Set aside to dry overnite(uncovered). The day stir it a bit if it's lumpy. This way you can customize the color and only make the amount you need. Store in an airtight container.
Hi Becky , I made the candy but I burned the first batch ! You really need to keep an eye on the thermometer. It’s was delicious. I use to eat this during Christmas time during the 1970’s . Brought me back to my childhood. We called it Angel food !
In New York we call the seafoam chocolate "Sponge Candy". Usually we can only find it in the bulk foods section. I am going to make this for my family this Valentines Day and am so excited.

Me too! My grandmother called it angel food candy, and a local candy shop called it "love food" as they specially made it around Valentine's Day because the humidity is so low this time of year and they were able to make it in super big batches without it getting sticky 💝💘

In my part of Canada (prairies) we call honey comb “Sponge Toffee”. It’s a classic treat found at most historic sites and museum gift shops!
I've never had it so I don't know what the texture is like. Is it like peanut brittle without the peanuts??

You could always add just a bit of red food coloring to your peppermint patty filling for valentine's day. or green for st. paddy's day. etc, etc...

So my surgeon would Operate without approval from the heart doctor, so that pushed it till the 9th. Along with that my mom went in the hospital and passed away on the 11th of Jan. I got out of the hospital on my birthday Jan 13. To be able to say a proper good bye to my mom. I'm so glad to be getting back to my happ place. Thank you Becky😊 💓

I know this refers to a previous video, but I have a tip to share with you.
When you couldn't locate your muffin tin? When I got rid of a lot of extra pans a few years ago, I actually got rid of ALL standard size muffin tins.
I use a sheet tray with canning rings when I make cupcakes or muffins.
The canning rings hold the paper liners in place. As a bonus, you can fit more on the sheet trays. Very helpful if you are baking quantity.

A tip for getting parchment paper into baking dishes (I learned this from @mina_rome!) is to get the parchment paper damp, crumple it into a ball, and then spread it back out again into your dish. It becomes so much easier to work with and doesn't spring back up out of the dish like it does when it's fresh out of the box, and it's a lot easier/faster than folding or cutting the paper
You can stop the damp part too... Still works great!

I love honeycomb candies. We in South Africa has a candy that called Crunchie. Literally a honeycomb bar enrobbed in chocolate.

Becky, You are an inspiration to me. I don't like to cook. I don't like to decorate my house, just as long as it is clean. Watching you, I have started to cook. It is extremely hard because I am on a limited sodium diet. Trying to find recipes that have flavor but low sodium is hard. I am also starting to make my house a little bit more enjoyable to live in. Hi Becky! Just a tip when sifting. Either use a hand sifter or use the bottom of a ladle to brush the sugar, soda, etc. through the sieve.
Watching you start over on a recipe is so relatable. I keep meaning to attach a cork strip to the door of one of my cabinets to pin recipes. I am just laying them on the counter and they are usually covered in food stains by the time I’m through.
I love Blue Tack for that (or the white one)…
Try putting the recipe in a food storage bag and zip it closed. No mess on recipe and leave near stove when cooking.
I always feel anxious when Becky put the trays or the cutting board right at the edge of the island.
Keep crossing fingers they won't flip over... hahahahaa!

I love Seafoam. My Nanny used to make it. I have her recipe now. I live in Virginia and we have always called this Seafoam candy. I love it.

I grew up in Central California. We would always go to the Central Coast (specifically the Morro Bay/San Simeon area). My dad always bought me chocolate covered honeycomb, but we called it seafoam too!

Honeycomb was my dad’s favorite too! In my 20’s I started making it for him. I was so glad to be able to give him that favorite from his childhood. He’s been gone over 20 years now, and I haven’t made it since. Now I want to try again.

I often roll sugar cookies in sprinkles. Using a smaller, but much deeper container and shaking them back and forth to coat is less annoying than rolling, to me at least. 😊
I love every single video! You motivate me to cook at home! One tip I want to share with you - if you crumple up (and then un-crumple) your parchment paper first, it fits into baking dishes soooo much easier!
You can dip the cookies or paint them with red food coloring/water, then dip them in sugar and the sugar goes red and the cookies get soooo yummy!!! We do that with christmas cookies… You bake the cookies first, then do this. 🤗
I work in a Bakery where we color our own sugar. Put sugar in a plastic bag (regular white or course white) put on a few drop of food coloring. Close the bag and shake. Add more color if needed. Pour the sugar out onto a parchment lined pan. Tap to even it out. Set aside to dry overnite(uncovered). The day stir it a bit if it's lumpy. This way you can customize the color and only make the amount you need. Store in an airtight container.

Watching you make your honeycomb recipe. I'm from Wisconsin, growing up we called it angel candy. It's one of my favorites during the Christmas season. 😋🤤 It is always coated with dark chocolate.

Me too! My grandmother called it angel food candy, and a local candy shop called it "love food" as they specially made it around Valentine's Day because the humidity is so low this time of year and they were able to make it in super big batches without it getting sticky 💝💘
