Me too. Pai is the best! I too can now enjoy and have fun cooking Thai food (my favorite), without spending 3X more at the restaurants. I enjoy restaurants, but now I can enjoy Thai food every day economically.
if you eat satay in malaysia, this is the sauce (gravy) that will be served. my mother always fry up the dried chillies, tamarind (with seeds), onion, garlic, peanuts. then she will soak the chillies in hot water until tender. pound up the peanuts. blend the chillies, onion and garlic. she will sauté the chili onion garlic paste until very fragrant in a low heat, until the oil starts to surface. then adds in the roughly pound peanuts. coconut milk. salt. palm sugar. roughly pound up some lemon grass and add it to the gravy. she also adds sliced up ginger sometimes. then she let it simmer slowly. the tamarind will be added at the last stage, to bind everything up. get rid of the tamarind seeds first by soaking it in water. if she's feeling fancy, she will slice some beef and add those too. it's so good. i can have this all day everyday and eat it with anything. Yours look delicious too!

This is the best Thai Peanut Salad Dressings I've encountered so far - I did not have tamarind so I just used lime juice and it works really well. You can also substitute chili powder and onion for the shallots. I use coconut cream powder mixed with water instead of coconut milk and peanut butter if you don't have fresh peanuts. Tastes wonderful regardless of not having all the fresh ingredients
I made this today and it was fantastic!! I followed the recipe really closely (so I ended up frying the potato fingers as well) and although it took me some time to finish it was so well worth it. Thank you!

Oooh, this salad must be the "brother" of the Malaysian "Jaganan", also a vegetable-based salad with a peanut-ty & spicy sauce. The Malaysian version can sometimes also include dried shrimp or belacan ("kapi") to add more zing to the sauce. Other suggested vegetables that work well with this dip - blanched lightly to taste - cabbage, long beans (snake beans), beansprouts, water spinach ("pak bung"). If one has no time to make those potato matchsticks, prawn crackers might work as a quick substitute.
I’m Mexican and i love Thai food and also your recipes the only bad thing is that most of the time I can’t find some of the spices in the grocery store. It would be great if you tell us for what substitute. Thanks

Hey William! She tells me she picked it up in Thailand - so doesn't know where to get it here unfortunately. I checked "brass wok" on Amazon, and given that her's is about 9-10 inches across it might be one of these? www.amazon.com/s/field-keywords=brass+wok
Is this a warm dressing or can it be used cold? I imagine you wouldn't reduce it as much if you wanted to use it cold. Otherwise it might be too thick.
Hi! Sure that should work, and chili flakes are better, but she tells me both lose flavour and aroma over time, so unless they are fresh they won't be as good. Cheers! Adam
