It's probably canon even though it's not in the movie. There's a bunch of weird details like that which are considered canon and must have just happened off-screen.
I adore the Luke moment deleted from TLJ but if you watch the movie again and see where it was originally supposed to go, it just wouldn't have worked.

11:20 I just can't fathom how fans could have been surprised or upset by Luke's story arc in Last Jedi. It is one of the standard mythological savior stories - the nobody who rises up to save everyone, but then, with time, becomes disillusioned and cynical, and just sick and tired of being expected to save everyone...and yet he winds up doing it anyway, and sacrificing himself in the process. Every mythological savior figure has an extreme moment of doubt, and Luke's moment of weakness in wanting to kill Ben Solo is his equivalent of the Biblical Garden of Gethsemane moment of doubt. If you aren't comfortable comparing Luke to Jesus, compare him to Paul Atreides in Dune Messiah, another sci-fi/fantasy series rooted in mythology.
Luke says himself though during that flashback scene, that basically, what he did was nothing more than an instinctive fight-or-flight reaction to his fears that what he saw would come true. He immediately regretted even considering it.
My brother who introduced me to Star Wars at age 8 with a VHS of a new hope and empire in 98'. He also took me to see episode III in the theater and has since passed... Watching the force awakens on premier day I bawled upon hearing the score hit during the tittle scroll because it hit me like a ton of bricks when I realized at the moment who turned me on to SW and I realised that the last time I had heard that John Williams master piece was with my brother was with him in the theaters. I literally started crying and with a packed room and no friends to explain it to I received many looks but none with a puzzled look as if everyone could think of a plausible reason for one to have that strong of a connection with star wars.
I’m gonna just say it the special edition changes to new hope (battle of Yavin) and empire (all the touch ups to cloud city, the wampa and a couple of voice line changes) improve both films considerably
I despise the shockwave in the Death Star explosion. But adding Biggs back in at the base is the greatest special edition scene. I hate the extra Wampa footage because the design doesn’t match.
I've seen the deleted scenes for Ep II. I honestly like most of the Padme's family scenes. I think that would have been better than the frolicking in the grass with those giant watermelon-pig scenes (that was clearly written by someone who doesn't know what love and romance are. We all know that Lucas wrote that, and yes I'm implying that George may be a sociopath. The deleted scenes are less boring and show way more depth to Padme and the blooming relationship between her and Anakin.

There's a huge chunk of TFA that was cut out that showed Kylo and the FO boarding the Millennium Falcon at some point, no idea why it was cut out. Supposedly there was another scene cut from TLJ where Kylo tries to talk Snoke out of destroying those planets with Starkiller Base too. Both scenes would have gone a long way in establishing the conflict in that character, but yea fuck that right.
The alternative Finn/Phasma fight from The Last Jedi......it’s awesome, I liked The Last Jedi but I don’t get why they dropped the better version of Phasma’s fate
The worst part of the Jabba scene is it also wrecks the introduction of the Falcon. Han just kind of walks in and chats with Jabba but in the original cut we don't see the Falcon until Luke does and there's this moment of like "this thing is junk..." and then they have to rush on board while being shot at. It's one thing I can say I definitely like about Solo, it gives the falcon it's introduction to the franchise back.
Dude, you didn't mention the scene in episode 1 where qui-gon slices maul's pd in half. that might be my favorite deleted scene from the preqs. Also, you didn't touch on the deleted Luke lightsaber from ROTJ. That's easile the best deleted shot of the whole series.

Referring to the old lady scene. In the script Luke and Biggs were having a conversation about him joining the rebellion. After that chat Luke leaves and drives off in his speeder. He passes the old lady and she yells something along the lines of “these kids and there speeders.” Something like that. Haven’t read the script in awhile.

The scene with Count Dooku’s statue is really good though; it helps build his character up a lot better than the final cut of Attack of the Clones
It’s a little on the nose, but that along with another line or two throughout the film before Dooku shows up would’ve made it all feel better
