Leg of Lamb a la Malbec Recipe:
Deboned Leg of Lamb - 4 to 5 lbs
1 white onion cut into big pieces
6 green onions chopped in half
2 carrots chopped into big pieces
2 tbsp fresh rosemary
2 tbsp fresh thyme
2 tbsp fresh oregano
2 tbsp fresh basil
2 tbsp fresh parsley
3 whole garlic cut in half
salt and pepper
2 to 3 bottles of Malbec Red Wine
Fried Potatoes Sauce Recipe:
1/2 cup Mayonnaise
1/4 cup Ketchup
1 tbsp Worcestershire sauce
1 tbsp of Paprika
a few good dashes of Tabasco
1 tsp of garlic Powder
1 good tbsp of Dijon Mustard
Salt
About 3 small Pickles cut into little cubes

Yes, it's me and I'm writing from this version of me, too since I don't know which will get to you! (don't see my other post).
Lamb is great, people just don't know how to cook it. We had millions of sheep here before we had cattle but they've been chssed away by the beef people.
Try the inexpensive but very "deli-chus" wines from the Livermore/Rippon and Modesto Valley, like "Bay Bridge" (Livermore) and a few others that are $3.00 a bottle but compare to $10.00 bottles from Napa, which is right next door.
Great recipe, like grandma used to make in Canada as a kid because we also raised sheep for the butcher shop. .

(The vines there originally came from France in the late 18, early 1900s. Then went back to France after the big blight thst killed all the vineyards there!

Well Ninja, I've got to hand it to you. While I've always been a huge fan of grilled rack of lamb, and leg of lamb always was on my list of things to try, it wasn't something that was on my immediate radar. Now, with this video, you have pushed me into giving it a try. You did a great job of explaining the cassoulet method of cooking this wonderful dish, and you had my mouth watering after watching. The visual appeal of the end product did me in. So, I'm adding leg of lamb to my grocery list right now. Thanks!

Lamb is great, it's just that most people don't know how to cook it or know what flavors to expect. The irony is, until the longhorn cattle were brought up into the southwest from Mexico in the mid 1800s, the primary meat eaten here was sheep! Lamb and mutton was the everyday meat and bringing in the cattle was what started a lot of range wars over grazing land because cattle need a lot more but, don't take the grass all the way down like sheep,which need to be rotated more often than the cattle so as not to ruin the land. Anyway, that's neither here nor there, the point is we've all but abandoned sheep in this country and the beef board is determined to keep it the way. Whwn you go to Europe and Australia/NZ, they have sheep galore and its cheap (there) and good. We need to get more sheep back in the US as an alternative to beef, pork and poultry. When I was a boy, in Canada, we had sheep on our land for the family butcher shop. We'd have big roasts and stews all the time. I have a recipe for real, authentic Irish stew that came from county cork which came with my family. Maybe we, if you're a good boy,I'll share it with you and you can make some real soda bread to go with it... Talk about soul food, brother, that's it!!

I couldn't edit my other post so, I want you to try one of the better tasting yet cheapest wines to come out of California, it 'sanything from the *Livermore Valley* (labeled Livermore or Livermore and Rippon valley) which is right next to the much more expensive but not that much better Napa Valley. If you don't see that, try Modesto, also in the same region.
"Bay Bridge" and a couple others from Livermore/Modesto make a GREAT cabernet and merlot (if you want a fruity element to that dish) and they go for about $3.00 a bottle! And yet, they compare with $10 bottles from the same region so, you can cook and drink with them 'til your heart's content!
All of the old vineyards in that whole region of Central/bay area of California were originally planted with the best cuttings from France, when the blight hit France and their vines all died, it was suddenly California that had the best vineyards and those are what was taken to rebuild the French vineyards so, technically, the French wines are actually from California! ;) Just fun fact trivia.
Do try those wines, I promise you'll thank me. When I was a school boy in Livermore, our house was across the street from the Wente Bros. vineyards which were open with nothing else around and we played in, catching tarantulas... Now it's all fenced off and guarded because they got so famous and expensive with vacation destination tours, etc..
"The good old days" are gone but, the wine lives on!! Be blessed,my friend. 😀

This really looks magnificent! Lamb is so underappreciated here in the States. My favorite meat has always been the humble lamb loin chop, direct grilled to rare+ over charcoal, simply salted & peppered. But this leg may just move the chops to 2nd place...
I have to agree, there are so many places cooking lamb and serving the most disgusting thing ever. Must of the people I know don't like lamb because of those awful experiences!

I've made a similar dish for years using lamb shanks, which is also awesome. But, I only braise them for four hours. Should I up the cook time for even more tender meat? Or is that about right for shanks?
I'm a huge fan of meat on the bone, and of cracking the softened bones for the marrow.
Hi Ninja, you need to try Hampshire Downs Lamb. This lamb is from Australia and has been selected because it has a high marbellng. (equivalent to a 4 on the Wagyu scale! )
Malbec is my fav wine and lamb is my 2nd fav meat …the more gamey the lamb the better especially rendered lamb fat…got to pair that lovely dish with a good Argentinian Malbec

I think Ontario, Canada has the best lamb. It tastes almost more like beef as opposed to other lamb which smells and tastes like hay. Though I may be biased since I'm from Ontario.
