- There is an ancient art in the meat world that can transform any ordinary piece of meat into a work of art, and the more love you give it the better results you'll get. That is, what we call dry aging. Yes, today, after a long waiting time, I will be finally able to compare these two ribeyes we have here. The only difference is that this one was dry-aged for 60 days and this other one was dry-aged for 30 days. Those are the 2 most common amounts of times most people use when dry-aging and today we will find out if waiting for 2 months is worth it or not.

I’ve never had dry aged steak! I think I need to invest to dry age my own steak, I’ve always loved the channel my ninja keep it coming!
I’ve tried aging 28 days, 35 days, and 47 days (couldn’t wait any longer). We find that 35 days provides the best flavor vs moisture profile, for us. At 47 days, the flavor is fine, it we find the meat dryer than our liking. At 28 days, its good, but still not the peak of perfection. For our household, 35 days seems the best. I’ve dry aged 5 or 6 Prime grade rib roasts for steaks in the last 12 months. We most often Sous vide them to 131F, then finish over lump charcoal, or sometimes just go hot and fast over lump. My wife prefers the Sous vide (and I like it that way, too) and I prefer hot and fast for a little more charcoal flavor. For Christmas dinner this year, we’ll have dry aged prime rib roast.

I have a dumb question I’m afraid. If I dry age my meat, then trim it, don’t I end up with a lot less meat in the end? I just hate paying so much for quality beef and then having to trim it even more. Maybe this is better for a more economic ribeye? Thanks guys!

What happens to the dry age flavor if you dry brine it with salt before the dry age? I feel like this would be a common question, but I havent seen it yet.
I've never tried it but salt is a drying agent too. The main problem is that salt also created humidity and also potentially destroy the bacteria and fungus that works in the process. I used to use salt to dry meats but it was done outdoors and with the sun hitting it as much as possible. If you try that in a controlled environment as dry aged is done I don't think it will have good results. Something to try thought! 😀

No UMAI bags... It is proven that's not the best way to go. I'm looking forward for that video too but we had been so busy here lately... A blessing none the less... I will make it happen soon! Promise! 😀😀

Mr. Ninja! Please try testing HEB wagyu and compare it to walmart. HEB has amazing quality everything but its only in Texas. Also the wagyu is more towards the expensive side.

The problem with that is the trimming, you will lose a lot of meat if you try to trim it whole.

I couldn't wait 30 days. I did 22 days. I just cut it up today. I did a little test piece of the ribeye in the pan. It was really darn good. Im gonna cook a full piece tonight for dinner on the coals. Its gonna be so bomb.

Changed my mind. Its gonna go in the sous vide. Im almost out of lump charcoal but I have enough to sear them on the chimney. Do you think there is a significant difference between 21 days and 28 days? I put a prime NY strip roast to start today. Im definitely gonna go at least 28 days with this one. Im using the Umami dry bags.
@@maddawgnoll the difference per lb @ costco between choice and prime is about 2 dollars. Your right though it does add up. 14lbs x $2 . In 29 days after the ny is done. I will try a choice grade with the last bag. 👍the ribeyes last night came out amazing. I loved it. Totally worth it.
