Hi erwan. If you will use oily fish, make sure that you properly store it in a fridge. some species such as sardines produce more oil, it'll then react with oxygen causing it to become rancid if not properly store after smoking. And yeah, its really good to dry your fish so that it can easily absorb the smoke. You can also add lemon grass, mango leaves, or guava leaves in your pot to incorporate the aroma of leaves in the smoke. ☺️
Can we just call the dish "TinaPasta" no controversy.

Basically Italian people misunderstood on how Filipino cooks the way we like. But technically we doesn't care if pasta originate at Italy, but we much love pasta the way we cook it.😂😂🤣
this. i believe their food culture has already been respected enough as is so no need to harp on it any further. by the end of the day it's just food and it's not like the cells breaking down what we eat has a use for concepts such as culture and heritage.

We smoke ours with Rainbow trouts!! Highly recommended as they are oily fish and don't dry out at all. The only downside is they are quite bony so if you are not used to eating bony fish, it can be quite challenging.

I don't often eat these at first for the reason that these are not available in our province. But since I came here in Manila I always make sure there's a bunch tinapa on my food cabinet. These are good source of protein and can be used in many dishes. The simplest I could think is an all time favorite : Ginisang Monggo 😊😊😊 Thanks for the vid. Gonna try making my own tinapa one day.

Tinapa goes well atsara... The saltiness and smokiness plays well with the sour/sweetness of the papaya.. Then a a fried egg (sunny side crispy edges) and garlic rice and I'm good to go..
I'm gonna try the pasta(not carbonara) on the weekend.. Just buy tinapa from my local wet market...
