Pancit Palabok with Crab Fat and Shrimp Oil (Filipino Rice Noodles with Shrimp and Pork)

- And we're back in the studio! Of course, the first agenda is to cook a Filipino recipe with Filipino ingredients. This is not your regular palabok, but it's definitely still Filipino. What's your favourite pancit? Leave it in the comments!

Recipe:
Good for 3 people
MARINADE
250g Pork Belly Boneless
¼ cup fish sauce
3 tbsp brown sugar
2 tbsp soy sauce
2 pieces of lemongrass
BROTH
2 Litres of Chicken Stock
4 cloves of garlic
2 scallions
1 leek
1 thumb size of ginger
SHRIMP OIL
1/3 cup canola oil
15 shrimp heads
2 tbsp atsuete seeds
SAUCE
1 red onion diced
6 cloves of garlic minced
4 tbsp flaked tinapa
2 tbsp crab fat
1 tbsp of cornstarch mixed with ¼ cup of water (as needed)
Broth (as needed)
Fish sauce to taste
PROTEINS
15 shrimps
3 eggs
TOPPINGS
Spring onions
Fried garlic
Roasted peanuts
Chicharron

This is actually by far the best version of palabok i have ever watched on youtube, looks sumptuous, rich and very creatively done.
This is the kind of food that you don’t usually cook at home (or can also be “you really don’t know how do it too” 😅) and so you end up ordering it outside for handa, or even just for meryenda. Thanks for sharing, Erwan!
I love my Mom’s crab sotanghon with lots of green onions, ginger, black pepper and glistening from the oil from the rendered pork belly fat that she uses to line the palayok or kaldero with 😸I also really like palabok but like Erwan said, it’s hit or miss. I don’t really like eating cold food. Palabok is often lukewarm or room temp and there’s that yellow, gummy sauce which I find really off putting. When done right, palanok can be amazing.

Palabok has been one of my favorite dishes of all time but I've always been intimidated cooking it because of how much process it takes, so I end up just ordering. But it's always a hit or miss. 😅 I love how this recipe is so personalized yet I can totally relate to how I'd want my palabok to taste like. I will definitely try this soon. Merci, Erwan! I'm never going to complain about the price of a good palabok again. That was awesome. The runny eggs were a nice touch. When I make this I'll put a saucer of crab oil as a side dish too.
