Indian food is the only cuisine I know I could be vegetarian with. The food, veggie or not, is so flavorful and filling. I love it almost more than my native Cajun cuisine.

(Yes this is bribery and I’m not ashamed to admit it because we all crave affection). This has elicited such a positive narrative from these heroes that I will learn immediately and try my hardest. Have a go. Honestly, good-enough Indian is not that hard to do at home. A few purchases of pantry basics and you are away. If it looks too fancy then skip it as there are a lot of simple dishes you can do pretty well at home without being a trained chef. Even the ones you don't quite nail are still good meals in most cases.

That is SO sweet! I hope you enjoy cooking and that your grandchildren keep coming to visit you for thirds! You should definitely try making chhole (the chikpeas curry) and bhaturas might be a bit tricky to make so you can make "puri" (also spelt "poori") to go with the chhole! They're basically just mini bhaturas (fried dough pancakes, look up the recipe online they're SUPER easy to make) and taste the same. My mum makes chhole puri very often and it's a great dish for when guests come over. :))

I bought spices from the India Spice House in my city. The owner taught me recipes... youtube can provide recipes and methods.
It’s delicious food. And you can vary every dish until you find your favourites.
You can also buy pre made mixes for more money.
Or for more money still, pre made sauces from the grocery store, Asian aisle. (We have those in Vancouver 🇨🇦)
I’ve found myself addicted to somosas from the grocery store. Often.. the 2 good kinds are out of stock !
Lastly, most expensive ... are the delicious restaurants.

These seemed Northern to me. Southern is volcanically hot. A tip from my Indian friends: accompany each dish with rice, naan bread, or raita (yogurt with cucumber). It gives the spice something other than your flesh to burn... lassi is a yogurt drink served with southern meals. It can be sweet or salty. Lassi also is there to prevent burning.

Here’s a trick of mine when I bring them home. Soak the balls in milk and squeeze out a little of the sugar syrup. Then remove the balls from the liquid and bake in a toaster oven the outside is a bit crispy. Eat as is or dip into the sweetened milk if you like. They taste freshly made with just the right amount of sweetness.
