Can I ask, did you fry it 1 or 2 times like the previous video and leave it crispy for a long time? If not, how can I make it crispy again? And after soaking the chicken in milk, if I'm busy with work, how long can I keep chicken in the refrigerator before frying it? Thank you so much!
Double frying is sometimes a matter of a chef’s preference or a small detail aimed at making the dish as perfect as possible. Since you're frying small pieces of chicken breast rather than whole cuts, you can definitely get away with frying just once. Frying twice can make the coating crispier, but it also runs the risk of overcooking the chicken, making it tougher. So, you can choose to fry once or twice, depending on how crispy you want it, but be mindful of the total frying time to avoid overcooking. If you want to make fried chicken crispy again after storing it in the fridge or at room temperature, I like to use an oven or an air fryer. Just like you’d reheat frozen fries, about 10 minutes in the oven or air fryer will bring back that perfect crunch. As for marinating the chicken in milk, I’d say you can safely keep it in the fridge for up to 24 hours. I often marinate my chicken in milk overnight when I know I’ll be busy the next day. Just keep in mind that the milk can absorb a lot of the chicken’s odor, so after marinating, I recommend discarding the milk and using fresh milk or water when you mix in your batter before frying.
