    Japanese American here. I grew up on instant noodles. Have eaten them my entire life (over 50 years). I know a thing or two about instant noodles. The Korean brands are the best, and Nongshim - the makers of Shin Ramyun - is the gold standard. As a bonus, Nongshim is made here in the US. Although I will say those Momofuku noodles look pretty good.

      As a vegetarian, Nongshim is my go-to with the kimchi and vegetable cup noodles. They’re fantastic!

      No need to keep tasting! At first foam add 1/2 cup of cold water. Second foam they are done. Transfer to a coriander and rinse a little under cold water so the noodles do not get mushy, or sticky & retain a proper slippery texture. Shake excess water off. You can then keep them in the frig in a bowl, covered with a damp towel for several hours. Then make the soup with fresh water ( or make the soup in the bowl first, then drop rinsed noodles into remaining boiling water to start cooking them. Why? Often ramen noodles have oil on them & that oil can go rancid & soup isn’t authentically made in the left over starch noodle wate😢r.

      I agree on the taste of Nongshim. However, for healthiest version, Mike’s Mighty Good is my goto these days. No junk in it.

    chili crunch + noodles = our classic go-to combo! especially when you're in a pinch. glad you like them! 🤝and to answer your question, instant noodles should 100% have a place in the kitchen at all times - pantry essential status for us.

      I am working on weight loss so I make a bed of vegetables and tofu or tempeh or even chickpeas when I need a little more calories. I use low glycemic vegetables and always use a variety of Asian chile garlic condiments, Thai, Indonesian, Chinese, always a fusion! So satisfying and healthful.

    So glad I found your channel! So many UA-camrs fall into the social media trap and create excessive recipes that the algorithm loves but people will never be able to make (or it's so unhealthy nobody should)--not that there is anything wrong with that, it's just not practicable for most people. I have tried to replicate a few of them and one of my favorite things is his salad dressing, and he did an episode with Ethan cheblowski where Ethan showed off a recipe for poblano chili peppers stuffed with Monterey Jack and then roasted in the oven. All I have to say is they were 🤩

    It'd be cool if you did a followup video where you take all 3 Momofuku noodles and figure out simple but delicious ways to add to them. Some recommended toppings, protein, maybe even alterations to the sauce (I know David Chang adds some honey and soy sauce to his soy & scallion noodles sometimes).

    Thank you for reviewing these brands! I've been so curious about all of these different brands. I've had to limit my sodium intake to half the recommended amount per day and have been on the hunt for alternative ramens ever since. My go-to option right now is chicken bone broth, Lotus Foods Rice Ramen (just the noodles), and a tablespoon of gochujang as a base for other toppings. But I've also been trying out more brands of pre-packaged things recently (wasn't a huge fan of Immi) and really want to try the Momofuku noodles and the Xiao Chi Jie noodles! They looked so good~

      Sauerkraut is a great hack. I buy bagged coleslaw cabbage as my quick cabbage hack, but I'm all over the sauerkraut - great idea!

    Such a great idea for a video, hope you do more of these! My latest "instant" obsession is Tteokbokki.
    From all these I've only had Mike's and the cup version (not a huge fan but also kept it plain) and Momofuku, where I thought the noodles were delish, and really nice quality.

      been loving some instant Tteokbokki been meaning to get it from a korean place but the only one nearby is like a 45 min drive so just haven't got around to it plus when I do go I always get the Bulgogi because its just so darn good but maybe next time ill splurge and get both lol

    Great idea to test these ramen products. I have eaten the aforementioned noodles also, but as I have worked towards improving my health over the past decade…I just can’t bring myself to eat something so unhealthy. I keep seeing homemade ramen dishes in social media that look incredible, but I’m pretty particular so I have yet to try any as yet. Thanks for creating consistently great content, I really enjoy what you put out.

    A good simple add to the Zhajiang mien (the sweet and salty noodles) is some cucumber sliced into batons.
    The crisp, cool cucumber is a nice counterpoint to the umami rich sauce. Those kits look goooood.

    I’m sold on the momofuku. Got the pantry set as a gift and the chili crunch goes great with any of the varieties. Different size noodles for each style is nice, and the noodles themselves are perfect!

    It would have been nice to get a quick note on what price you found each of these for. Obviously there can be some regional differences, but it would be helpful knowing that the Xiao for example is $50+ for the 6 packs, compared to the Momofuku at $52+ for 20 packages.

      Wow, $50 for six serving? That seems luxury. Would have to seriously give it serious thought about dropping almost $10 for “instant” noodles.

      Yeah that's the biggest issue I have with this video. Sure you would expect to spend a smidge more than like the most basic Maruchan for a better product but these are all massively overpriced and it's dumb to compare them when they are all on their own tier anyway.
      Maruchan: $3.68 for 12 servings, $0.31 a serving
      Momofuku: $13 for 5 servings, $2.60 a serving
      Mike's: $23.33 for 7 servings, $3.33 a serving
      Immi: $39.99 for 6 servings, $6.66 a serving
      Xiao Chi Jie: $44.99 for 4 servings, $11.25 a serving
      Obviously the one that costs $11.25 a serving is going to be better than the one costing $2.60 a serving, they aren't even on the same level. And that's not to even mention, that's the "most expensive" Maruchan price, you can buy a 24 serving pack on Amazon for only $6.24, $0.26 a serving. Who is going to pay ~$40 for 4-6 servings when they can pay $6 for 6x the amount of food. Yes the Maruchan is slightly less healthy but like, use less of the seasoning and load it full of veggies and proteins, that would be a way more cost effective way to make it healthier and taste more premium.

      @@BrandonGiesing the relationship between cost and value gets murky depending on the persons economical status. Most would all at fine dining prices but to some, it’s a mere after thought and a part of life. The premise of instant noodle or convenience foods has taken on a new life with the explosion of work from home and wealth increase. Obviously the premium products have their market and they’re catering to that market. Supply meeting demand.
      Im not a picky eater. Tho gas like caviar will never touch my taste buds in this lifetime. Offered for free, I wouldn’t turn it down but it’s not a dining experience I am chasing; likewise for the $10 per serving noodles. If I want to get fleeced for a meal, I want ambiance to go with that.

    You should look into one of the Sun Noodle kits, they are in the fresh/frozen category and are awesome. They also make a stand-alone noodle without a broth.

    Hi, Mike, so many great cooking tips! I have been eating the Japanese instant noodles forever. My advice is cook the noodles, make sure you rinse in cold water to get rid of all the bad stuff and off flavors, don't use the flavor packet unless you are desperate. Now they are ready for soup, chow mein, throw in all your leftovers. Budget friendly.

    Hi Mike. Love your content! How would you go about making a broth for, let's say, the Momofuku noodles, since the flavor packet is liquid? Wouldn't it just dilute it? I love Shin ramen and what I can do with the broth.

    I eat a LOT of Mike's ramen, it's steadily available at the grocery store. But I sub toasted sesame oil for their oil pack and add a dash of soy sauce along with my toppings. It's a good basic ramen.

    Hey Mike, I just checked how much each of these different packs of noodles cost and OH MY GOD!!! The cheapest is $5.00 plus shopping per pack and the most expensive is $9.00 plus shipping per pack !!!!! I can eat in a restaurant in China town for that with all the toppings and not have to make it myself, how can they justify those prices for flour and water?? It's just crazy. Oh well, great video though, much love x

    I’ve recently found a nice half way option, use dashi powder, soy milk and miso, this with some aromatics, plain instant noodles and toppings. Not fully home made but not instant, but really nice. 👍

    I bought a bunch of the Immi, very disappointed, I'm actually ok with the texture of the noodles but the broth doesn't stick to them at all so they never have flavor. I even made a spicy peanut noodle dish with them but the sauce wouldn't stick which was strange.
    On a side note, could you do a video on your composting process? I live in the northeast and have some land now so would like to compost but not sure how and will it work in winter. Thanks!

    I've had the special premium ramens in japan's 7-11 that are specially made with popular ramen chains in japan and those all had a mix of powder soup base with a sauce pack to achieve something that is probably similar to what the momofuku one does, although with a soup based ramen instead of the mazemen style

    I love ramen and have bought the high end brands like Momofuku. It's also possible to make a very decent bowl of ramen using the 25 cent Maruchan instant noodle packs with your own sauce, like miso or shoyu. Add some good toppings.

    Was happy to see you review the Momofuku noodles in your newsletter since I just started eating them recently after ordering six packs of the soy & scallion and spicy soy ones. I have found them pretty boring. I like the actual noodles but they are definitely lacking in the flavor department on their own and I was thinking of how to add more flavor to them in a quick way. I'll have to try an egg and maybe some other Asian sauces from my pantry. I have really wanted to try the Xiao Chi Jie products, especially the soup dumplings, but I live in Toronto so I doubt they'd ship a freeze dried shipment here.

    I actually always have instant ramen in my kitchen. I use them for easy to make fried noodles. I will use maybe half the seasoning packet sometimes. Or if I’m not feeling well I’ll just make some good old fashioned cheap instant ramen soup 😊

    I am not surprised about the Momofuku being your favorite after you said that they had partnered with A-sha for the noodles. I stumbled across A-sha noodles in my attempt to find good vegan friendly ramen and they have a couple of flavors that are vegan and they are really tasty! They can be hard to find though.

    Nissin instant chow mein noodles have been my favourite so far, liquid flavouring packet that you add after filling to the line and microwaving, and a dried stuff package you cooked with the noodles. But sometimes you just need that Mr. Noodles salt-bomb (plus my rabbit likes snacking on the cardboard box if I buy a case of them).

    Have you tested Black Shin Ramen? That one plus probably any of these tastes restaurant quality with the addition of left over smoked ANYthing (pork belly is the best). The smoke carries through in the broth and then adding cabbage, corn, scallions, soft boiled eggs takes it next level.

    I would recommend the Japanese frozen brand Myojo. They have a variety of flavors, all good. As close to Japanese restaurant quality as you can get in the US. They have Miso, tonkotsu, soy, and salt flavors. All good,,, but my favorite is the miso flavor, of which they have 2: miso and spicy miso. Give it a try! About 6 bucks for a 3 pack, but they're also sold as 2 packs, IDK what the difference is as I have never purchased the 2 packs.

    My go-to when I am out of food is grab a quick ramen pack (not the fancy kind), fry up aromatics with some veggies, dump it in the ramen and let it soak for a bit.
    Great for the nights when I am both low on ingredients, and feeling extremely lazy. Ironically this is what happened tonight.

    For me, my favorite noodle has to go to Samyang. I might not always use the sauce packet they include, but their noodles are top tier.

    The momofuku noodles are made by A-sha who also makes the hello kitty noodles. They are all pretty tasty. We add a scoop of peanut butter and make peanut noodles.

    Hey Mike, you should check out Sun Noodle. The noodles are freshly made weekly and shipped frozen. You can get them with or without a soup base. They have been a staple in my house and a good way to use extra ingredients in the fridge to make different ramen bowls or noodle dishes.

    Here in India we get a brand of Instant noodles called Koka. And they make a ton of different flavors, right from Singapore Laksa, Spicy Sesame, Stir Fry flavoured to Pepper Crab. Probably the best instant noodles I've had.

    I was surprised how reasonably priced the Momofuku noodles were. Much more than Top-Ramen but definitely in line with what you'd pay for a better brand at an Asian market. Mike's Mighty Good are also pretty reasonable, although the portion is smaller. For me, the portion is probably just right though. My husband would likely want more. I'd definitely have leftovers of the Momofuku if I was just making them for lunch for myself. Definitely going to try these if the shipping isn't prohibitive. I live in RI and presumably they ship from NYC so hopefully not too bad.

    Momofuku's Soy & Scallion sauce is to die for - I wish they sold it separately in bottles, since it's the best for chinese custard eggs and else. Would appreciate a recommendation if anyone found a readymade dupe or a recipe!

    hey great video! just a techincal observation, throughout the video there are, for a about 2-3 seconds at a time, really high pitch sounds. I hear them to be in the 17.000-18.000 Hz range. If your hearing is old you might not hear it but for younger ears it's ear-piercing. Some examples are at 1:03 , 1:41 , 4:18 and in many more places. No idea why it's there. Thought it would be a nice feedback.

    If you think of instant noodles as dried noodles and add ingredients as shown on the package ( in a sense recreating the dish ), you will have a nutritional meal. Or just add whatever protein and vegetable that you like to your instant noodles. I stopped eating instant noodles with just the seasoning when I was 13. I'm 63 now. In some instances, I sauté the proteins first before adding water for the soup and then whatever else I fancy. Lots of combinations with different meats and vegetables, resulting with a different noodle dish but originating from the same instant noodle base. And nutritious. And you can use the cheaper ones too😁

    what i do is i take
    a broth cube (match your meat or boost the vegi taste)
    3dl water
    "one brick of noodles" (you know what you like this is 1 portion)
    splash of fish sauce
    vegies (whatever you like)
    meat (not tried fish)
    boil the cube and water until dissolved, add the sauce, if you like me like to add "hard vegetables" like beat roots, carrots, or whatever you like is "cooked" now is the time to add them
    while boiling fine cut your vegies, put at the bottom of your bowl of choice, these are to be served "cold"
    right before the vegies are done, add the noodles cook as you like it
    pick up the noodles + vegies and place ontop the "cold" vegies
    pour over the broth
    + points for toasted sesame seeds and a fried egg
    easy squeezy

    This selection of "best" instant noodles seems a little parochial. I don't think any of these are widely available (if at all - at least not in Australia) - so I can't really comment on how good any of these are.
    My pick for best instant noodles (that also happen to be much more readily available):
    1. (Korea) Hwa Ramyun
    2. (Korea) Shin Ramyun
    3. (Singapore) Prima Taste - Laksa La Mian (which was featured in the brief spread of premium instant noodles at the start, but not selected as one of the 4)
    The first two are direct competitors, while the 3rd is a laksa - entirely different noodle (and can't really be considered to be in the same pricing tier) - so perhaps not quite in the same category.
    For those of you who rate Shin Ramyun, give the Hwa Ramyun a try.

    I think instant noodles have their place. I am gluten free and do use some instant noodles. I like the Lotus Foods Rice Ramen and the Vietnamese Brown Rice Noodles. Neither of them comes with sauce, bullion or anything like that. I use my Homemade bone broth I keep on hand. Even-though I find these noodle quite nice my favorite are still my son's Chana Besan noodles that he makes for me.
