Hey Mike, cheers from Argentina. Parrilla [that's the name for the Argentinian style of grill you've got] tip: don't whack the wood like that to make the coals fall. You'll mostly end up with unproperly "burning" coal which might not burn completely before dying either in cold days or when the grill is still not hot. You want to just wait for it to fall naturally. You can aid it a bit by moving it a little but whacking it like that is a really common begginer problem around here. Well done though! Proper parrilla skills. You might want also to get a small plain shovel with a long "handle" (idk how to call it, the stick part) that's specifically made for that work, it makes moving the coal lots easier

I had a feeling that "cohesive it's missing" WAS the Harissa Mayo 🤣 I belive in adding ingredients too a Balanced recipe , but I find it disrespectful when somebody takes something OUT and then say it's "MISSING SUM" 😤
@@tntwylmann but he likely didn't have harissa on hand. I appreciate the fact that he made an attempt to recreate the flavor in an accessible way for viewers instead of maybe just adding ketchup.
Edit: oh I just saw that he left it out completely and just added the pepper alone. So yeah, I agree, it has mayo for a reason!
@@tntwylmann That's one thing that slightly irks me. How could you honestly rate someone's recipe if you omit entire steps? I would've loved if he did his own take AND made the original too.
I think most will agree to not miss out on the MAYO. I love this guys grilling style & his recipe looks amazing (4.5 Spatulas) but I think Mr. Hank had a 5 already👨🍳 I'ma switch over to @salt_hank vids & binge on those recipes for the rest of the day lol🤤

Hell yeah! Keep it going, it's a great thing to learn and personally, really relaxing.
Sometimes things go wrong, but that's just you learning. I really recommend Food Wishes. Chef John makes some great simple recipes and has a great way of teaching everything.
Go for easy recipes and then watch some America's Test kitchen to know what you can improve. (Their cookie recipes are amazing)
Also, If you're interested in simple recipes and occasional food science stuff, Adam Ragusea has GREAT simple, objective and practical recipes for everyday family lunch.

J. Kenji López-Alt, for me the most competent chef in all of youtube, has great almost real time recipes in his small kitchen and knows A LOT about his stuff.
I made Oklahoma smash burgers for dinner tonight, and they were INCREDIBLE! I used jalapeno mustard as the only condiment and I also used Vidalia onions sliced as thin as I could get them. They were awesome!
Surprised you never heard of George Motz. He's cooked numerous amazing burgers on his show. Onion supposed to be crazy thin, so it melts, and gets crispy at same time
I second this. I don't think I've ever heard 'Oklahoma smash burger' in a sentence without the mention of George Motz.

Hey Mike, super random, but I love seeing the construction guys reaction. Something I wish more people did was share their food with others. Those burgers looked good, you (and your brother) were one of the first channels that inspired me to cook!
America's test kitchen also did smash burgers, but they got the as much water out of the onions as possible and onions went on first and the burger is smashed into it.

I made salt hanks from the Insta recipe. The harissa Mayo is necessary.
Should have watched Motz do the onion burg. He is the king. Mustard only, no special sauce. Pickles on the side. Plus American cheese would have made a massive difference. Trust. Cheddar cheese just gets lost, or overpowers if it's too strong, while American melts and amalgamates with the beef and gets in all the nooks and crannies without overpowering. It's a beautiful thing.
I like both cheeses, a slice of each, so you get both the creamy richness oozing in the nooks as well as the stretchy chew with a nice sharp flavor & awesome crispy edges
Don't need any sauce for a proper Oklahoma smash.

I've heard a few diff ways to cut an onion, but I def paused and rewatched how you do it at @3:06, and will be applying that technique next time I need to chop an onion!
Awesome video! For anyone wondering about the rub/seasoning used in the last tik tok, I believe it was a Spiceology Derek Wolf Beer rub. They have a few varieties, but that can looks like the Mesquite Peppercorn Lager Rub.
Talking about one big takeaway…putting a coarse premade spice mix in a mortar & pestle? Such a simple thing I’ve never thought of!

Small tip, soak the marrow in a brine ... it draws out any blood and gives a really clean white marrow
In pakistan we make burger patty like things called “Chapli kebabs” - they incorporate bone marrow into the actual burger patty itself! Would have been amazing to see you do that, instead of cooking the onions in the marrow!

It looks like you started the smash burger with some smashed ashes on the grill. That's a great grill as long as you do not have the grill pan on the grate while you're smashing the charcoal.
when I make the Oklahoma burger, I put the onions on first, for a minute or two, then add the patty. We loved them

All three of those burgers look amazing! The sauce for the lamb burger was really thoughtful with the combination of mint and feta. I like the use of this classic combination in a burger.....I was super excited about the bone marrow caramelized onions so when you tried the burger and said it didn't make a difference I was a little bummed. Overall the first one had my mouth watering! I am a huge fan of smash burgers but have never had one done with the onions smashed in like that. I can't wait to give it a try! Thank you so much for sharing these yummy burgers!
In Mexico we’ve been eating bone marrow forever. Personally I like it by itself on a tortilla with salt. Love the taste on its own.
A little lime or lemon juice with the marrow helps cut the fattiness, but yes, agreed.

If anything goes for burgers, here in Australia we would never ever have one without beetroot, it is what makes a burger a burger!
that Feta sauce is very close to tzatziki in terms of ingredients and greeks also have a cheese sauce that is a bit spicy, so this is like a mix of both and I really like it !!!!!

I love my Ñuke Delta grill. I’ve made smash burgers on it several times, including onion ones, the included griddle works well for that. I’ve lamb burgers before, yet I’ve never made them. That one did look quite busy. I think a lamb burger with a simple aioli sauce is good. Lamb, unlike pork, doesn’t need too much extra, it’s flavor needs to shine.
I’ve never had bone marrow any thing that I can recall. Those burgers looked excellent.

Only thing to update from the bone marrow is to leaveing them over night in salt water to remove a bit of the blood from it, but perfect flavor I bet !
spread the coals under the grate further apart rather than letting them pile together, it tends to create a hotspot, only about a half inch apart, it will disperse the heat more evenly 👍
You really do need a mandolin for the Oklahoma burger though, but great video. Thoroughly enjoyed!!
I bet marrow from a hambone would give more of a rich, distinctive flavor! I gotta try that burger recipe with a hambone marrow! Love the vid as always!

Try the smash burger with sourdough starter pancakes as buns. I poured the starter over cheddar Fukake seasoning and onions and salt... Fries it in butter. Seasoned and friend the other side the same way...
Try bone marrow fried sourdough topped with smashed avocado. It tastes good

Let the burger do the work. Love a simple burger and can't go wrong with a smashed onion burger from Oklahoma.
The bone marrow might not be noticeable in flavour to everyone but it sure adds higher amounts of nutrients therefore elevating the burger that way. Also the adiponectin found in the marrow helps break down the fats otherwise found in the burger making it a healthier option so that the body can use the fats without contributing to insulin resistance.
Are you no longer using burlap and barrel spices? I just watched that video and I actually like the basic set as well as the white pepper.

Add some old bay to your burger sauce, and put about a tsp of sugar for an onion at the end when carmalizing onions and about a 1/4 of a cup of water, and youll get a nice onion jam.

That feta and ricotta sauce looks delicious. I’m not really a fan of lamb, could I put that on chicken?
I believe it would probably be pretty awesome on some roasted or rotisserie chicken and maybe some pita bread! He did say the garlic was strongish, so I would add it incrementally to the sauce to make sure you wouldn’t overpower the chicken.

1:46 one of my friends fathers is from Argentina and he has a grill very similar to that grill and he will do Argentinian barbecue, and it has been some of the best food from a bbq I have ever tasted. The best place to be is right near the bbq because once food is done he will start handing out pieces of it.and it’s there are no words to describe how good it is
It's the wood right? I've never eaten food grilled with firewood, but just imagining eating something with oak or cedar smoke is almost too good to imagine lol
