I'm so glad Bourdain got to do what he did for food and education. The combo of him and Chang is so wonderful. So much respect for both

love David Chang--you have to watch him make noodles by hand. It is a show extraordinaire. He's a magician, throwing them around ...armfulls swinging like ropes

The Mind Of A Chef with David Chang was an astounding food series and nothing he's made since has come close to it, except for maybe the greatest food magazine ever made, Lucky Peach.

Man, David said something that made me realize why Japanese and Italian cuisine are my absolute favorites: They both have their roots in humble home recipes to help people get by, and they elevate those dishes into something special. There's a lot of history and love put in to every single dish in both food cultures, and it really comes through in the flavor.

I travelled to Japan a couple of times and had the best food of my life there. The ramen, sushi and tonkatsu are out of this world. Even the noodles dinners at 7/11 were delicious. I went to a really small mom and pop place where they served egg sandwiches and they were the best that I ever had. I told the lady as much in my very poor Japanese and she was super happy and started to ask us where we were from etc. I hope I can go back again someday and eat all the foods again!

Had the privilege of dining at this Taishoken on my japan trip about 4 years ago. That tsukemen still left a lasting impact. I want some more!!!
