ooking for 45 minutes, isn't that too long? I have watched some other "sweet Potatoes soup"youtubes and the cooking time is 12, 15 minutes. So was there a mistake with 45 minutes? Thank you for your answer,

If I were not so used to having the ginger in it , I would probably prefer it without the ginger too. It adds a strong taste that i sometimes find unpleasant if Im just looking to satisfy my sweet tooth

What kind of sweet potato variety do you use?
I used the yellow sweet potato variety in the recipe, which gives it a nice sweet flavor.😸

why rinse the starch out of the potatoes? ☹️ the starch is what makes the soup a teeny bit thicker
Well...this process can prevent surface oxidation and blackening. In addition, it can make sweet potatoes softer. 😄
