that setup and gear is nice. my complaint is servicing lattes and cappuccinos in those large paper cups. Yikes!! I'm concern with the coffee to milk ratios.
Hey! No worries, we buy 12 oz cups for Latte's (just like your standards ceramic latte cup), and 8 oz for Cappuccinos (Same as ceramic cup size). We taste all of our drinks and make sure they taste perfect before serving our customers.
If you had to do a "pop-up" for an event without electricity far flung in a field somewhere (wedding venue, music festival), how would you pull it off?
I'm starting a espresso bike and I would like to know what generator works best. Also would you recommend the equipment you are using to start out or are there any machines that will do the job without it being so costly? At least until I get going.

Hey there, sorry for the late response. Thank you! The lines Mini is a beast. I mean it's kinda hard to reach its maximum output at a given time. Maybe if you get a order of 5 12 ounce Latte's, depending on how fast your grinder, prep time and whether you brew and steam at the same time, you'll may experience a loss of steam pressure by the 4th drink. Assuming you're not splitting your shots in two. In short, if I were starting all over again, without a doubt I'd buy the Linea Mini again.

Hey Napo! Love the videos, and I'm looking to start my own pop-up shop sometime soon! I was wondering about how many people an hour you're comfortable handling with your setup, and how well you can keep up with rushes?
Thank You! I want to say that our set-up cannot handle 300 plus people. But we've done that and more with our little set-up. However, it is not comfortable at all. In high demand, you will see the limits of the Linea Mini and Mazzer Mini, you will experience inconstancy in your shots and would have to pull all your coffee knowledge together to make it work. Keeping the line moving will be your biggest concern, and it is going to feel impossible. We no longer serve pourover coffee because it was slowing down our lines. It's bitter sweet; long lines is what you want, but it comes with frustration for you and your customers. This is not an easy question to answer! LOL At the end, you have to trust in your Barista skills and your ability to hustle to make things work. If I can do it all over, I will definitely buy a 2 group Linea Classic, with a Mohlkonig Peak espresso grinder. I would also buy a Batch Brewer for drip coffee, because some people just want a regular cup of coffee and when they finally make it to the counter you have to explain to them that you done serve regular coffee. Adding a batch brewer will satisfy those customers and also get the line moving faster. I will be posting a video on this soon. I hope this information is helpful. God bless you!

Hello! Sorry for the late response. We actually built ours from scratch. Coffee carts are really expensive, not even sure why. You can convert a workbench into a cart or work off a solid table with skirting. I got most of my ideas from www.capsulemfg.com. Hope this information is helpful. God bless, Napo

Some people say its good for home use, but i see you killing it at the pop shop. They're pretty expensive so not sure about investing in it or getting something bigger to be on the safe side. Great cart, but I have to install foodgrade stainless over our wooden table top surface because a coffee cart is considered “limited food prep”. This results in food preparation surfaces being smooth and non-porous. This doesn’t apply to every event we do because it seems that different jurisdictions have different requirements, but it is a requirement in our county in California.

I actually thought of purchasing a custom trailer from a company out in Seattle (www.seattlecoffeetrucks.com), to avoiding building a cart that meets all the requirements needed to serve the public. I'm also thinking of purchasing a custom coffee cart from CAPSULEMFG (www.capsulemfg.com) so I can serve the public and open my services to weddings, meetings and other smaller functions. Thank you! The pitcher rinser has to be plumbed in; although we purchased a plumb kit for the LM, we decided to not to plumb it in and use a long hose to refill when water was running low in the reservoir.

Uzair Hanif I wouldn’t recommend the Linea Mini for a café. You would at least need a LM GS3. The Linea Mini is great, but it does have its limits. We’ve had 50+ people line up for cappuccinos and we managed to pull it off. However, we have to deal with pressure loss for steaming and temperature loss at the group head. Which means inconsistent shots and textured milk. The only solution is to have your customers wait, and that can means bad business for a café. In short, because of the boiler size, the machine needs a certain amount of time to recuperate after every 4+ drinks (depending on ounces) to combat inconsistency. It’s a powerful little machine and I love it, but if I can do it all over I would’ve gone bigger. : )
Hey I just saw your comment. Unfortunately I don’t think the Breville Dual Boiler would keep up with demand. You would need a commercial rated machine. Like A La Marzocco Linea Mini or a Nuova Simonelli Appia II 1 group espresso machine.
If I can chime in. Look into Astoria machines, simply because of how sturdy they are. In the mobile application, I suggest staying away from dual boilers because the PID is sensitive to vibration and environmental hardship. Something sturdy, dependable and consistent is key for putting out 50 drinks/hour or 1 drink per minute as mentioned above event states. My 2 cents...

Hey sorry for the late response. We were conveniently set up indoors near a kitchen. However, the only dishes we'd have to clean are our pitcher rinsers and carafes. We served our drinks in paper cups. When a sink wasn't available to us, I'd simply fill pitchers and carafes with boiling hot water and soap, then rinse them repeatedly with our pitcher rinser. We do not have a sink setup underneath our cart, but you may need one if you're serving to the public outdoors. It depends on your state laws.

Hey amigo, correct I am using the water reservoir of the Linea Mini and I've experienced no issues at all. I only wish the low water sensor would warn you about two shots from automatically shutting down. However, if you listen to your LM as it pulls a shot, you would notice that it pulls rougher or louder as it gets closer to running out of water. This is great because it reminds you to refill before you'd ave todo it infant of a customer or even worse, it shuts down right in the middle of your shot. lol
Thank You! popup espresso bars are becoming more popular nowadays, because the overhead cost is a lot lower than opening a shop. However, it also requires A LOT of work.. Honestly, sometimes the money you'll make is not worth all the time and labor that running a popup coffee cart requires, especially if you are offering espresso based drinks. This kind of business often starts with little to no profit that gradually increases over the years. It will take passion and a lot of love for one to stick it through. If your in it for money, you'll probably get frustrated and quit (it happens all the time). I'd recommend you to keep it as simple as possible - regular drip coffee served from a mobile coffee cart/bar, brewed with a commercial grade coffee brewer, use freshly ground coffee, fresh filtered water setup under the cart, one size cup (it's worth adding a logo to your cups), hot chocolate and tea options are a must, and a friendly responsible person to serve your customers. This will be the most profitable and easiest way to add coffee to your traveling boutique. It will literally save you over $6,000! : ) I hope you find this information helpful. sorry for the late response.
Here in New York our tap water isn't so bad. So I installed an Everpure QC7I Single Filter Head with a Eso-7 Everplus 3-Stage Blending Cartridge to filter our tap water. Although it was an expensive upgrade, in the long-run we will save a lot of money since we no longer need to purchase filtered water. We are still using the reservoir of the Linea Mini, but we have already purchased the Kit to plumb the espresso machine. It's really satisfying to see our dreams unfold. Correct. This cart was built specifically for the venue that has granted us permission to serve coffee. A full size kitchen and restroom was readily available. You know, I’m a bit confused with the whole hand sink requirement as I see carts in business all over the New York City without hand sinks. Even food vendors. I read through the requirements - health codes, licenses, insurance, equipment etc. and I don’t think they apply when you are serving at a farmers market or at a venue indoors. only if you are selling coffee to the public on the streets or in a park. For all the work, money and time it takes to be completely certified as a cart, you’ll probably be better off opening a small shop or a coffee truck. In my opinion.

Thank you! I actually don’t have any plans, I just kinda worked it out. I suggest purchasing a work bench and converting it into a coffee cart. It’s the easiest and fastest way to go about it. Just wrap the bench with your desired wood (could even have HomeDepot make the cuts for you), seal the bottom, add wheels a power strip and you’re ready to go.

Yes. The linea Mini is a beast! However, if I can do it again, I would buy a Linea PB 2 Group. The Mini is very powerful, but it has limits. Lately we've been serving for events of 100 - 300 people and the Mini simply was not made to handle such demand. Now we need more power from both our espresso machine and grinder to increase speed and output. It would also be nice to have some volumetric features. : )

One person can do everything, if you feel demand will be low for that day/event. However I feel things run much smoother for your business and customer experience if there are two people behind bar. Also, when demand increases and there's only one person behind bar, you'll loose a few customers due to longer wait time.
Hello! I'd recommend a La Marzocco Linea EE Semi-Automatic Espresso Machine. This machine may not have all the features as the higher models, but this machine is a workhorse and has everything you need to craft delicious espresso based drinks. Its price makes it the perfect starter (& long term) espresso machine. Shops often use these when they first open up to minimize loss should things not work out. Once your shop grows and your espresso machine is struggling to keep up with demand, or you simply just want to upgrade, you can then use this espresso machine for catering, pop-ups, 2nd location, home, etc. Thanks for watching and I hope this information was helpful Blessing!
Hey Darren! Unfortunately, I never had the chance to steam soy milk. But I could imagine it'll be similar to almond milk. You want to hear hissing as you stretch the milk, you want to see a fast whirlpool motion, and only steam just below the pitcher is hot to touch. If you're not already, I recommend you use Pacific Barista Series Soy Milk, as it was created specifically for steaming. Unfortunately, we haven’t served at a wedding. It all depends on destination, amount of people, the menu and how much help I would need to provide such service. There’s no base amount, every market is different.

About 10K +. It depends on your choice of equipment and whether you are going to build your own cart or not. It will most likely cost you more if you plan to sell coffee outdoors, as the health laws and requirements of the state are usually strict and costly to abide.

Hi! Sorry for the late response. Congratulations on you’re new espresso machine! : ) You shouldn’t have a problem running the Appia 2, Mazzer Mini and pump for the Pitcher Rinser on a single circuit. We do it with the Linea Mini and haven’t had any problems. : )

Hey I just saw your comment. Unfortunately I don’t think the Breville Dual Boiler would keep up with demand. You would need a commercial rated machine. Like A La Marzocco Linea Mini or a Nuova Simonelli Appia II 1 group espresso machine.
If I can chime in. Look into Astoria machines, simply because of how sturdy they are. In the mobile application, I suggest staying away from dual boilers because the PID is sensitive to vibration and environmental hardship. Something sturdy, dependable and consistent is key for putting out 50 drinks/hour or 1 drink per minute as mentioned above event states. My 2 cents...
When you are at events, what's your main power source? Do you have a generator or is your cart always set up indoors next to nearby outlets?
Hey there! My apologies for the late response. We plug strait into the wall. We currently only serve coffee at a church, we are conveniently stationed near two 20 Amp outlets, a full kitchen and bathrooms.
I love your pop-up bar set up! It's really great. I was wondering how you go about doing dishes? Do you have a dish sink underneath the cart or is it somewhere else in the building?
Hey sorry for the late response. We were conveniently set up indoors near a kitchen. However, the only dishes we'd have to clean are our pitcher rinsers and carafes. We served our drinks in paper cups. When a sink wasn't available to us, I'd simply fill pitchers and carafes with boiling hot water and soap, then rinse them repeatedly with our pitcher rinser. We do not have a sink setup underneath our cart, but you may need one if you're serving to the public outdoors. It depends on your state laws.

correct I am using the water reservoir of the Linea Mini and I've experienced no issues at all. I only wish the low water sensor would warn you about two shots from automatically shutting down. However, if you listen to your LM as it pulls a shot, you would notice that it pulls rougher or louder as it gets closer to running out of water. This is great because it reminds you to refill before you'd ave todo it infant of a customer or even worse, it shuts down right in the middle of your shot. lol

Thank You! popup espresso bars are becoming more popular nowadays, because the overhead cost is a lot lower than opening a shop. However, it also requires A LOT of work.. Honestly, sometimes the money you'll make is not worth all the time and labor that running a popup coffee cart requires, especially if you are offering espresso based drinks. This kind of business often starts with little to no profit that gradually increases over the years. It will take passion and a lot of love for one to stick it through. If your in it for money, you'll probably get frustrated and quit (it happens all the time).
I'd recommend you to keep it as simple as possible - regular drip coffee served from a mobile coffee cart/bar, brewed with a commercial grade coffee brewer, use freshly ground coffee, fresh filtered water setup under the cart, one size cup (it's worth adding a logo to your cups), hot chocolate and tea options are a must, and a friendly responsible person to serve your customers. This will be the most profitable and easiest way to add coffee to your traveling boutique. It will literally save you over $6,000! : )

What do you do for water? Direct plumb? Water reservoir?
Here in New York our tap water isn't so bad. So I installed an Everpure QC7I Single Filter Head with a Eso-7 Everplus 3-Stage Blending Cartridge to filter our tap water. Although it was an expensive upgrade, in the long-run we will save a lot of money since we no longer need to purchase filtered water.
We are still using the reservoir of the Linea Mini, but we have already purchased the Kit to plumb the espresso machine. It's really satisfying to see our dreams unfold. Thanks for your interest in our humble beginnings. God bless you! : )
Hey there. Are you not considered by the health department a mobile food establishment? Is that why you don’t have a hand sink?
Correct. This cart was built specifically for the venue that has granted us permission to serve coffee. A full size kitchen and restroom was readily available.
You know, I’m a bit confused with the whole hand sink requirement as I see carts in business all over the New York City without hand sinks. Even food vendors. I read through the requirements - health codes, licenses, insurance, equipment etc. and I don’t think they apply when you are serving at a farmers market or at a venue indoors. only if you are selling coffee to the public on the streets or in a park.
For all the work, money and time it takes to be completely certified as a cart, you’ll probably be better off opening a small shop or a coffee truck.

Thank you! I actually don’t have any plans, I just kinda worked it out. I suggest purchasing a work bench and converting it into a coffee cart. It’s the easiest and fastest way to go about it. Just wrap the bench with your desired wood (could even have HomeDepot make the cuts for you), seal the bottom, add wheels a power strip and you’re ready to go.

Yes. The linea Mini is a beast! However, if I can do it again, I would buy a Linea PB 2 Group. The Mini is very powerful, but it has limits. Lately we've been serving for events of 100 - 300 people and the Mini simply was not made to handle such demand. Now we need more power from both our espresso machine and grinder to increase speed and output. It would also be nice to have some volumetric features. : )
NapoHBarista TV In what kind of time frame have you been serving 100-300 people and if you were confined to a smaller space and could not fit a bigger machine like the 2 group PB, would you stick with the Linea Mini or switch over to a superautomatic machine such as a Nuova Simonelli ProntoBar?

One person can do everything, if you feel demand will be low for that day/event. However I feel things run much smoother for your business and customer experience if there are two people behind bar. Also, when demand increases and there's only one person behind bar, you'll loose a few customers due to longer wait time.

I'd recommend a La Marzocco Linea EE Semi-Automatic Espresso Machine. This machine may not have all the features as the higher models, but this machine is a workhorse and has everything you need to craft delicious espresso based drinks. Its price makes it the perfect starter (& long term) espresso machine. Shops often use these when they first open up to minimize loss should things not work out.
Once your shop grows and your espresso machine is struggling to keep up with demand, or you simply just want to upgrade, you can then use this espresso machine for catering, pop-ups, 2nd location, home, etc.

Unfortunately, I never had the chance to steam soy milk. But I could imagine it'll be similar to almond milk. You want to hear hissing as you stretch the milk, you want to see a fast whirlpool motion, and only steam just below the pitcher is hot to touch. If you're not already, I recommend you use Pacific Barista Series Soy Milk, as it was created specifically for steaming. What's the cost of the setup
About 10K +. It depends on your choice of equipment and whether you are going to build your own cart or not. It will most likely cost you more if you plan to sell coffee outdoors, as the health laws and requirements of the state are usually strict and costly to abide.

With the machine, the grinder, and the rinser are you able to function well on one dedicated 110v; 15 amp electrical circuit? I've had my eyes on that same grinder and we've already purchased our machine (Nuova Simonelli Appia II Compact Espresso Machine). Hoping to fit in a rinser as well.

You shouldn’t have a problem running the Appia 2, Mazzer Mini and pump for the Pitcher Rinser on a single circuit. We do it with the Linea Mini and haven’t had any problems. : )
