    The American crayfish, Procambarus clarkii, has found its way to the waterways of the Netherlands, sparking both fascination and concern among the locals. My neighbour approached me when I was walking the dog and asked, “what is this creature?” He was pointing to something by his front door, of all places. It was an American crayfish, a freshwater crustaceans I often went searching for as a kid in streams and creeks. Native to the southeastern United States, this invasive species has established a presence in Dutch waters and has raised questions about its impact on the ecosystem and its potential as a culinary delight, if not a welcomed part of many native birds and animals in The Netherlands..

    Officially, it is an invasive species in The Netherlands. The American crayfish's invasion of Dutch waters is primarily a result of its escape from aquaculture farms, ships watertanks and the pet trade. This invasive species competes with native European crayfish for resources, and it carries a deadly crayfish plague, a disease that native species have no immunity against. (Sounds like what the European brought to the indigenous natives of North America!) The American crayfish's rapid reproduction and aggressive nature further exacerbate the problem, threatening the survival of native crayfish. This part is concerning.
    There is though an ecosystem Impact. American crayfish pose a significant ecological threat to Dutch water bodies. Their burrowing activities disrupt aquatic habitats, contributing to erosion and changes in water quality. They also prey on aquatic plants, insects, and small aquatic animals, potentially leading to disruptions in the food chain. The invasive crayfish's presence in the Netherlands has prompted conservation efforts to protect and restore native crayfish populations. These efforts include monitoring, eradication of invasive crayfish in certain areas, and research into developing methods for controlling their spread.

    All of this said, the crawdads are still a welcome food source for many! While American crayfish may be viewed as a threat to the ecosystem, some Dutch people see them as an opportunity for culinary exploration. The crayfish, also known as Louisiana crawfish, are popular in Southern American cuisine and have made their way into Dutch kitchens. Some restaurants offer American crayfish dishes, and adventurous home cooks have embraced the idea of preparing this invasive species as a delicacy.
    American crayfish are versatile in cooking and can be used in various dishes, from crayfish boils to pasta recipes. The meat is tender and has a distinct flavor that some find appealing. However, it's essential to remember that consuming invasive species can potentially perpetuate their presence in local ecosystems, so responsible harvesting and preparation are vital.
    Many other Dutch birds and animals eat these tasty freshwater crustaceans! In the Netherlands, several native species may consume American crayfish as part of their diet. Some of these animals include birds. Such as the great blue herons, gulls, and cormorants. And, as I mentioned, the great grebes. They even feed their chicks these mini lobsters! Some native fish species, particularly predatory fish like pike, perch, and eel, are known to consume crayfish. Eurasian otters, which inhabit wetland areas in the Netherlands, are known to consume crayfish as part of their varied diet. Even frogs and turtles, will eat them, although most turtles are also invasive here!

    As a little girl in the 1960s we used crawfish (we called them crawdads) as fish bait! My grandpa and I collected them from the creek in Kansas.

      Indeed, they were great pickerel en large mouth bass bait! Here in NL they have large northern pike, right in the waters in this video and I’m sure they are preying on these crawdads as well!
