    Recipe:
-1.5 cups buckwheat groats (apparently you can use buckwheat flour, however I have not tried this or any other substitutions)
    1/4 cup chia seeds
    1 cup water
    1/2 tsp salt
    1.5 tsp baking powder
    1) Soak buckwheat groats overnight in plenty of water, or at least for 2 hours
    2) Rinse buckwheat thoroughly and place in food processor (blender would work fine as well)
    3) place chia seeds in a bowl and add 1 cup water. Allow to sit for 10-20 min until a gooey texture is achieved.
    4)Preheat oven to 330F
    5) Add remaining ingredients to food processor and process until mostly smooth but still a little bit chunky.
    6) Place mixture in a loaf pan lined with parchment paper.
    7) Bake for about 1 hour and 20 minutes. Individual ovens vary, so it could be anywhere from 1 hour 15 min to 1 hour 30 min.
    8) Wait 30 min or so before slicing (if you can :P )

    Just tried this with
1 cup of Buckwheat flour (vs the 1.5 cups of groats)
Replaced Steps 1 and 2 with
    - add 1/2 cup of water to the Buckwheat Flour, and mix thoroughly with a fork
other than that, stuck to the recipe, worked great.

This recipe is excellent! Since finding this recipe, I make it about 2 batches every 3 days. I have added in 1 tablespoon bagel seasoning, 1 tablespoon coconut sugar, omit the salt, and then top it with more bagel seasoning. I also make cinnamon raisin bread with it. Thank you so much!! My son has many food intolerances, and he loves it!

This week I randomly tried the same ingredients as flatbread in a pan and only found this when I looked to see if anyone else did it but I used buckwheat flour. I also found that no matter whether you want to use it savory or sweet a little black pepper added to the taste. The pan version works great and cooks in 5 minutes in olive oil on a medium heat.
I'll try the loaf version now. Thanks from the little grey island the other side of the pond!

Sounds very good, although with this method it would probably contain natural airborne yeast so wouldn't be yeast-free. However, natural fermentation is usually very healthy if you can eat yeast.

Hello! This is one of those extremely rare times when I actually made the dish in the video. I had some buckwheat sitting around for a very long time. I bought it because I had to change my diet due to PCOS and discovered I didn`t like it XD But then I saw your video and decided to give it another chance. My bread turned out like nothing I had ever tried before. It`s spongy, dense, gooey, delicious, and very satiating! Like some sort of alien bread and I love it! I think it will become a staple in my home from now on, thank you! P.S. I also added ground and whole flax seeds. And I think it helps a lot if you wrap it in kitchen cloth after baking, so the crust remains a bit softer and the bread maintains moisture.

The thing I like about using the grouts rather than the four is that buckwheat really does need soaking and rinsing. It gives like a thick pink soap . You can't do that with buckwheat flour. Also if you soak the groats in warm water then it will speed up the process.
