    My mother in Chile would make these and she did not use goat cheese because none of us in the family liked it, but using the innards of the zucchini, sauteed onions, bread crumbs, some soft cheese & Parmesan cheese and when mixture cooled, she would add a beaten egg before stuffing the boats, she would also leave them in the over for a bit longer until the boats would be golden brown with nice crust on top. They would come out so nice and hefty and well filled. Delicious! It reminds me, I should get some zucchinis and make some for this weekend. Take care.

    I am pretty lactose intolerant, which rules out most cheeses. So I would go the breadcrumb route here, though my system could probably take a light grate of parmesan for flavour. It's an appealing way to serve zucchini as a starter -- might even pop some finely chopped mushrooms in with the veggie mix to add to the flavour of the filling, and some more seasonings. The thyme is fine when you have cheese, but if I leave it out, as I will, there's a need to up the ante!
    But I can think of lots of other fillings, too -- leftover cooked chili, which of course is already seasoned and sauced, or some purpose-made ground beef with the seasonings of one's choice. Cooked lentils with grated carrots and some seasonings -- I have a similar filling for stuffed peppers. This one is lovely for cheese lovers, but the rest of us can draw inspiration and ideas from it.

    My zucchini is in full production in the garden and struggling to keep up eating it all with out getting bored. I was looking for a new recipe, found and made this one tonight….delicious!!! Used some old cheddar, a teaspoon of plain cream cheese and a pinch of Parmesan in the cheese mix for the stuffing because that’s what I had on hand and it was great! THANK YOU!

    Yum. That looks wonderful. When I stuff zucchini, I leave both ends on. That gives a rustic look instead of 'professional'. It's fun and saves a step. 🥒🧈🧀

    I make similar dish without the thyme and the topping is different… mix bread crumbs and cheese, melt and mix in bit of butter, then top. It gives a bit of textural crunch… I am going to add that thyme, too. Love love love your videos. I am definitely making these today.

    Awesome recipe, the only change I made was in a little bowl I mixed some Panko breadcrumbs with Parmesan cheese a little smoked paprika and then I put that on top and gently put a tiny bit of good Spanish olive oil on that and then cooked it for a crunchy top. Amazing recipe thank you.

    The giant Zucchini were two for a dollar at the farmers market, and I knew exactly which recipe I wanted to give a try. 1 Zucchini was able to make four boats. Mozzarella and Parmigiana were in the fridge, so that is what was used. Instead of Oregano, a couple of dissolved anchovies in the onion/garlic mix added some umami. It was my first recipe from this channel after a month or two of watching and a total home run! Deserves a Patreon follow for sure, see you over there shortly.

    Thank you so much for your awesome channel and for so many easy to follow recipes! Finally, authentic recipes (with their authentic names) without weird ingredients, everything easily accessible in Berlin - Germany (maybe apart from the fresh fish haha). I tried doing the stuffed zucchinis before, it wasn't good, I was using the wrong cheese, things would be spilling out, but I didn't know about such simple, yet important tricks. Now, the dish looks and tastes amazing, I'm grateful for all the work you do, thank you, saludos desde Berlin!

    Albert, I make zucchini all the time. I've tried a lot of preparations, simply roasted, breaded and fried and in the style of a Korean side dish. But, this recipe looks amazing. It may vault to the top of my list! Muchisimas gracias, hombre.

    I made this recipe with feta and cheddar cheese. It tastes so good! Such a perfect way to prepare zucchini!
