    The good part about this Zero Oil Thali is that despite no oil or ghee being used to cook the dishes, they taste just as great and delicious as food cooked with oil.
    In this Zero Oil Thali you will enjoy the familiar flavors of our regular Indian food and not realize that no oil or ghee has been added at all. All the flavors come from the appropriate use of masalas, yoghurt and nuts in paneer to adda little richness.

    Recipe :
    Zero Oil Thali
    Moong Dal
    Preparation Time: 10 minutes
    Cooking Time: 10 minutes
    Serves: 3-4
    Ingredients:
    1 cup yellow moong dal
    3 cups water
    ½ tsp turmeric powder
    Salt to taste
    1 tsp chopped ginger
    ½ tsp red chili powder
    1 tsp chopped green chillies
    1 tsp roasted cumin powder
    1 tbsp lemon juice
    Chopped coriander to serve
    Method:
    Wash the dal well. Pressure cook the dal with 3 cups water, salt to taste, turmeric powder, green chilies and ginger, for 2 whistles.
    Allow the pressure to subside. Stir the dal well. Add the lemon juice and mix well. Serve garnished with roasted cumin powder and coriander leaves.
    Mix Veg Subji
    Preparation Time: 20 minutes
    Cooking Time: 20 minutes
    Serves: 3-4
    Ingredients:
    1 cup cauliflower florets
    3-4 carrots
    100g beans
    ½ cup green peas
    2 tbsp subji masala
    ½ cup yoghurt
    Salt to taste
    ½ tsp turmeric powder
    1 tsp red chili powder
    1 tsp kasuri methi
    Method:
    Cut the carrot into batons. Cut the beans into 2” pieces.
    Bring 4 cups water to boil. Add ¼ tsp turmeric powder, ½ tsp salt and bring to a boil.
    Add the vegetables and blanch for 2 minutes. Discard the water.
    Mix all spices except the kasuri methi, in the yoghurt. Add the yoghurt to the veggies. Add salt to taste and mix well. Cover and cook till the vegetables are tender and the moisture evaporates. Add the kasuri methi and mix well.
    Garnish with coriander leaves and serve.
    Shahi Paneer
    Preparation Time: 10 minutes
    Cooking Time: 30 minutes
    Serves: 3-4
    Ingredients:
    250g paneer
    1 large onion
    20 cashew nuts
    2 bay leaves
    5-6 green cardamoms
    Salt to taste
    1 tsp white pepper powder
    1” ginger
    ½ cup cream
    1 tsp kasuri methi
    Method:
    Chop the onion roughly. In a pan, add the onion, ginger, garlic, cashew nuts, bay leaf, green cardamom and 2 cups water. Cook for 20 minutes till onion is well cooked. Remove from heat and allow to cool completely. Remove the bay leaf and grind to a smooth paste.
    Return the puree to the pan. cut paneer into 1” cubes and add to the pan. add the cream, white pepper powder and mix well. Add salt to taste and add the kasuri methi. Serve.
    Raita:
    Preparation Time: 10 minutes
    Serves: 3-4
    Ingredients:
    2 cups yoghurt
    ½ cup finely chopped onion
    ½ cup finely grated cucumber
    1 tsp chopped green chilies
    Salt to taste
    Roasted cumin powder to sprinkle
    Method:
    Mix together all the ingredients well. Chill & Serve.
