    NUTRITION INFO PER SERVING (WITHOUT FILLINGS)
    Total Carb = 4.1 g
    Dietary Fiber = 2 g
    Net Carb = 2.1 g
    Calories = 173
    Total Fat = 15.2 g
    Protein = 5.2 g
    DRY INGREDIENTS
    Almond Flour = 240 g / 2 cups
    Other flour options
    1. Combo of Almond Flour =120 g / 1 cup + Coconut Flour = 40 g / 5.7 tbsp
    2. Solely Coconut Flour = 80 g / 11 tbsp
    Baking Powder = 4 g / 1 tsp
    Salt = 4 g / 1 tsp
    NOTE
    1. I have intentionally omitted the sweetener as I found that it prevents the waffles from crisping up when toasted. For some time now, I have been puzzled why my sweet keto bread does not crisp up when toasted. But when they are plain, they crisp up very well when toasted. Then I started eliminating ingredients to find out what is the cause and eventually I found that it is the erythritol. I tried other sweeteners like lakanto and stevia and found the same effect. I googled but could not find an answer until one of my Instagram followers shared a link where I could get an answer. Thanks to this person (iamsayafen), I understand now that erythritol does not undergo browning reactions during baking like table sugar components do (glucose and fructose). As a polyol, erythritol does not contain the C=O group, called carbonyl, necessary for browning. And I believe that this may apply to other keto friendly sweeteners too.     2. For these waffles, I tried with and without the sweeteners and found that without the sweeteners, the waffles could crisp up better when toasted. Of course, the crispiest is the almond flour version while the almond and coconut flour version is moderately crispy. For obvious reasons, the coconut flour version is the softest and could only crisp up just a tiny bit.
    3. For waffles, it is totally fine to omit the sweetener as we will be adding sweet toppings to them.
    4. If you do not mind the waffles to be soft, then you can certainly add about 50 g of sweetener which is mildly sweet so you can adjust accordingly.
    WET INGREDIENTS
    Eggs = 2 large (about 60 g per egg with shell)
    Melted Unsalted Butter = 60 g / 1/4 cup
    Vanilla Extract = 2 tsp
    Unsweetened Pea or Almond Milk = 240 ml / 1 cup
    NOTE : For a dairy free option, you can replace the butter with coconut or olive oil.
    FILLINGS
    I used 4 fillings in this video, but you could actually use whatever keto friendly fillings;
    1. Keto Strawberry Jam (Please see this video on how to make this jam - • HOW TO MAKE KETO STRAW... )
    2. Sugar free chunky peanut butter
    3. Sugar free chocolate almond butter
    4. Bacon & Cheese
    DIRECTIONS
    1. In a bowl, mix all the dry ingredients until well combined.
    2. Add the wet ingredients and mix until a thick batter is formed. Reserve 2 to 3 scoops of the batter for the bacon & cheese fillings. Then add 2 tbsp pan fried bacon, 2 tbsp grated cheese and some bacon fat. Mix well and set aside.
    3. Add the vanilla extract for the main batter and mix well.
    4. Preheat the waffle maker and grease it to avoid sticking. Of course, greasing is not necessary if your waffle maker has a strong non-stick function.
    5. Add half scoop of the batter onto the center of the waffle maker, top with 1 tbsp of the strawberry jam, peanut butter or chocolate almond butter. Cover with another half scoop of the batter. Close and cook for about 5 to 10 mins.
    6. Remove and cool on wire rack to prevent the steam from softening the waffles.
    7. To make the paper holders, just fold a piece of paper measuring 9x9 inch or 23 cm as shown in the video.
    8. To crisp up the waffles, just toast them in a mini toaster oven.
    9. These waffles can be easily frozen for months, and you can reheat them in a mini toaster oven.

    Ridiculously good. I tried keto Nutella, good good raz jam, and good good blueberry jam, and peanut butter. Delicious and slightly crispy no toasting, straight out of the waffle iron. I also made 1 adding 1tsp allulose to the batter. It was Gourmet level. It wasn’t crispy but was decadent. I put the Nutella substitute in that one. They were all delicious! Thank you for the recipe

    erythritol can become crispy when cooled, I've seen other youtubers sprinkle erythritol on top of the waffles when it's almost done and heat it for additional 30 seconds, when it's cooled erythritol will become crystalized again, and it creates a crispy outer layer for the waffles.

    Excellent recipe and I tried it with the olive oil to avoid more butter then when the waffles came out I crisped them in the toaster just for a minute and they were delicious and satisfying. Thank you for your lovely recipes.

      Thanks! I have experimented with croissants but not successful as its quite difficult using low carb flours which are non-gluten, heavier and more moist.

    Freezing Question: do you have to thaw first? Then toast? Or can you pull right out of freezer and put directly in the toaster oven? Either way... how many minutes? TY! I'm seriously sooooo excited!

      It's better to defrost first then toast it about 5 mins each side or until browned and crispy

    CRISPY!!!???? You have my attention! Haha! Has anyone tried with Dash Mini Waffle Maker? It does not require greasing normally... is it different for this recipe? Also I imagine scoop size should be smaller? By how much? How many waffles total did you get from this recipe size and the smaller waffles?

    Dash Mini Waffle Maker Question: who can tell me how many minutes to use with this recipe? Other recipes I've only cooked for 2 or 3 mins... but this video talks about 5+ mins I think? Is that longer time key to the crispiness? Or is it just due to larger waffle maker working differently? Also what size scoop works with mini to do filling without overflowing on the sides when you close it? I appreciate replies from anyone that has tried it!

    My waffle iron goes up to 6, 6 being high, what temp are you cooking these at for 5-10 minutes

      My waffle machine has no numbers for temperature, but I normally use between medium to high heat.

    Failed! I tried a half batch of all 3 versions listed as a taste & crispiness test. Not a single one turned out crispy! 😞 what could I have done wrong? Does it really only work in a big waffle maker? Do the Dash mini waffle makers just not get hot enuff? Any other ideas how to make it work with the minis? Or a different potential problem?

      Did you add sweetener in the batter? I think any waffle maker would work. It's the batter that's important.

      @@lowcarbrecipeideas I used your recipe, which has no sweetener. The sweetness should come from the fillings. But I also tried no filling, and that did not get crispy either.

      If you used the almond flour version, it sd turn out crispy. Almond and coconut flour version will be moderately crispy while coconut flour version wd be the least crispy. Also you need to cook it longer until well browned so that it is crispier.

    I have a problem with almond and coco waffles. No matter how long I wait they don't get cooked through and the waffle gets cut in half, the top party gets sticked to the top and the bottom party gets stucked to the bottom 🙄🙄 whyyyy??

    Hi! Yesterday I tried to make these waffles, but don’t know why my waffles can’t stick together, I’ve tried 02 recipes, only almond flour & another with almond flour & coconut flour. Both also turned out the same, what happened? Was it bcoz without adding the psyllium husk?

      Top & bottom separating, didn’t form in one piece, I tried to put longer, it’s burned & when I took out became ashes.

      @@funcoolchan8949 It could be the waffle maker. My old waffle maker was causing problem too. Both sides got stuck to the plate even though I greased them. In the end, I got a new one and they all turned out beautifully. Not sure yours is the same problem but if you follow the recipe and the batter is thick it sd turn out the same

      Actually I don't find any brand stated on the waffle maker. It was a sponsored post on instagram that caught my attention and since the price is reasonable, I ordered it. Took about 2 weeks to arrive and I think its from China by looking at the manual. With this pandemic, I found hard to buy at electrical shops as most of them are out of stock. Fortunately, this waffle maker turned out fine so far.

      I like that your maker is rectangular shaped and you can also put the batter in middle to make it round. Too bad I can't find similar ones. If you happen to find the link of where you ordered it would be really appreciated!
      I also want to thank you for all the low carb or Keto recipes that you shared. Truly helpful! I'll definitely try your tips to eliminate the sweetener to make waffles.

      Yes but you need to dilute it with ratio of 60% water + 40% cream
