I made these yesterday. They have a very dark chocolate taste and the cooling effect of the erythritol is practically undetectable. That said, if I make these again I will probably increase the sweetener by 5-10%. I would also try coconut cream instead of heavy cream to up the coconut flavour of the middle layer, or possibly toasted coconut. My wife also thought a jam or jelly layer might enhance them, maybe cherry for a black forest variation. Also, room temperature eggs are very important for the base layer. Cool eggs made mine firm up too much to be spread in the pan without further warming.

I did add more sweetener in all the layers (personal preference) and drizzled a very small amount of yacon syrup over the set ganache.. perfect! One thing to add is that this sets very hard in the fridge so it should be eaten at room temperature, so leave your pieces out of the fridge for an hour or so before eating. Next time I might bake the brownie layer for a little less time, and add more cream to the coconut layer as it was very thick. Nonetheless, the flavour combination is incredible and each layer compliments the other perfectly. Thank you so much 😊

I made this on Monday. It is absolutely one of my favorites. It is sweet, but not too sweet and the dark chocolate gives it a nice bitter taste too. So good. And it is so fatty, I am satiated with one little piece. Yum! Sure saving this recipe for myself and doing it again today or tomorrow. ❤️

Hello 👋🏻 I just made these this morning and they turned out amazing! I have to stop myself from eating them all in one session. Made this today, withouth the coconut layer because I didn't have the time and I made half the ganache for it to be a bit thinner. It's cooling now but I did have a lick of the brownie before it went itno the oven and it was amazing.
Ok I have a warning for anyone making these. This stuff is HEAVY!!! I took a nice big chunk with some whipped cream and strawberries and could barely breathe I was so full. It’s been 5 hours and I’m still very full. This stuff is a full on fat bomb. It’s delicious. Really is. Real nice rich full chocolate flavor, no wierd aftertaste ( I use N!cks Use like sugar sweetener ) and is an amazing desert.
No i haven't! It's a struggle just doing 2 videos a week and experimenting on other days. But maybe one day in the future hopefully. Thanks for your support ❤️
for ganache and whipping cream, just heat whipping cream till hot but not boiling and pour over chocolate in pieces, wait for a few minutes till it soaks, and you can mix it, no need to boil or heat on the oven hob. also on top I d rather add walnuts or pistachio than salt, otherwise great brownies.
Frankly I have not tried that. I suggest you sub the butter with solid coconut oil and yes you can sub the whipping cream with coconut cream. If you do try, let me know how it turns out 🙏
If I hadn't seen the video I would have messed this up. I would have kept adding liquid to the coconut layer so that I could POUR it over the baked layer. And again with the ganache. The word POUR means that it's liquid. A more accurate direction would be SPOON it over the previous layer. It's a good thing there's a video
I actually used chocolate bars. You can use coconut oil and cocoa powder but I am not sure about the quantity as I have not tried it. Yes you can use stevia

Erythritol does not dissolve in fat. I tried to make chocolate with it - it does not dissolve at all and stay in crystals at the bottom of chocolate bar.
You can replace with coconut cream. Yes I have a cat, Felix and dog, Furby. Both were rescued just outside my house about 3 to 5 years ago. Are you an animal lover?
I’m keen to try this but, as there’s just me, would this be suitable to freeze do you think? Then I could just take a piece out when I need a sweet fix (probably every day lol)

Not necessarily but it's more affordable. It may have an after taste for some people but you can use any keto friendly sweetener. I think stevia liquid is good - very neutral without after taste and so is Allulose but it's more costly
Just make the brownies with the ganache. That's what I'm going to do. I love coconut, but want to try the brownies alone first to see if I like them before adding coconut :)

Coconut flakes are bigger pieces but the one I used were shredded into tiny pieces which is much like dessicated coconut
