These are amazing. I made them with almond flour and rolled into 2 logs and refrigerated for about 2 hours. Just cut into 1/4" discs and they are so delicious. I only had walnuts so I chopped those up pretty small. So crumbly and delicious! I can't wait to make them again and add the orange rind as suggested in a comment below. Don't wait to make these. Easy!
I made absolutely perfect round cookies by rolling them into a small ball, then flattening gently with the swirl of a drinking glass bottom. I wet it before each swirl to be sure they didn’t stick. Fast and easy. I still chilled for 20 minutes before baking, so the butter wouldn’t seep out. They came out perfect.
These cookies are delicious and easy to make. I've made them twice and they always come out great. They are a soft cookie, so I cook them 15 minutes. I put them in the U shaped mold and froze for an hour. To cut them, I saw them to keep them in tact. However, if the cookies come apart, they can simply be pressed back together, even after removing them from the cookie sheet after cooking, and leave them to firm up. They do expand in cooking so give them room on the cookie sheet so they don't turn into a solid sheet of cookie.

This is my second time making them. I make the Allman ones. I added lemon and orange citrus. I also added chopped cranberries and pistachios. Then I dipped half of it and a sugar-free melted chocolate. They were delicious.

I have been craving a cookie just like this for so long. It was agonizing having to wait for a day I had the time to make them but make them I did. I made the coconut flour cookies because I’m so tired of almond flour stuff tasting like buckwheat. They are delicious, just what I was craving. So I made a second batch, replacing one tsp of vanilla for lemon extract, as I am really craving lemon cookies too. Again, a great success! Next I’m going to replace 1 tsp vanilla with wedding cake extract, and the nuts with Lily white chocolate chips. I’m betting they taste like those yummy white chocolate chip cookies I used to get before keto 🤗 I’m just hoping that they do firm up a bit more as they are, indeed, a very soft, crumbly cookie. Thanks so much for your feedback 🙏 Yes, coconut flour cookies tends to be soft and crumbly but if you refrigerate them, they will be firmer. If you prefer crispier cookies and want to avoid almond flour, you can use other ground nuts such as walnuts, pecans, hazelnuts, peanuts etc. at the same ratio. I tried these and they looked beautiful and had a wonderful texture but all I could taste was the sweetener. I’m going to try again pulling way back on the amount of the sweetener and hope it makes a difference. Not giving up 😊

I just made these and 😱Soo good. !! I didn’t have cranberries.. So I substituted with Lillie’s sugar free milk chocolate chips. The chocolate shortbread and toasted pecans mixture is a game changer. I used coconut flour. I also toasted pecans for like 10 min and adddd some brown swerve. Although they were PERFECT! Mine came out a lil sweet but that’s my fault. I added vanilla stevia drops too. No need for more sweet because the choc chips. You guys this is so good! You gotta let them cool off the pan …Otherwise they fall apart. Also I just shaped in parchment paper and the square shape was perfect too. Thank you so much! The ideas are endless !! Yum.

Instead of a mold, you can also place the mixture in the fridge for a short while until the dough is firm enough to shape by hand. Form it into log and flatten each side to produce a square shape, then wrap, freeze and cut as usual.

Tried the almond flour version with some protein powder. Cookies taste good, but more fragile than yours in the video. So I put them in the fridge and see if they'll get firmer the next day.

In terms of flavors and taste, they're all the same. Almond and coconut flour versions resembles more of shortbread cookies than walnut version (but it taste good too). In terms of texture, almond version is slightly crispier than coconut version.

My concern is that retrieving it may be a problem. After baking, they're very soft and delicate. But they will firm up after they have been cooled for some time.
Almond flour version is actually firmer. The dough needs to be chilled before baking so that the butter does not leak causing the spread. Also the oven heat must not be too high.
You can but it may not melt completely as the baking time is very short. Hence, powdered sweetener is recommended. You can just grind the granulated sweetener until powdery

If you don't have a mould, just roll it to a round log, freeze it, and then cut it into what will be round discs😊 Thank you for a great recipe!😊

Almond flour is the best but if you bake the coconut version slightly longer, it tastes just as good
Keto cookies crisp up very nicely if you put them in a dehydrator for several hours after baking. Try it.

I made the almond flour ones. 3/4 cup of sugar was too much. They have an overly sweet bitter aftertaste flavor. I used erythritol for the sweetener.

You could use unsweetened dried cherries, raisins or just omit it

@Tree sunflower seeds have the same macros as almonds so you can use them instead.

Can these be put in a silicone brownie mold for the squares??
My concern is that retrieving it may be a problem. After baking, they're very soft and delicate. But they will firm up after they have been cooled for some time.

Almond flour version is actually firmer. The dough needs to be chilled before baking so that the butter does not leak causing the spread. Also the oven heat must not be too high.
May I know how’s the texture of the cookies? Soft or crunchy ?
They're soft and buttery but if you prefer a crispier texture, you can bake them a little longer

You can but it may not melt completely as the baking time is very short. Hence, powdered sweetener is recommended. You can just grind the granulated sweetener until powdery
