You should totally watch Dr. Geoff Lindsey's videos; one of the things he covers is how words in practice differ markedly from words as we think they're said. So "all of 'em" would be common in various accents whereas "all of them" mostly if you're trying to be Very Proper. The V eats the TH, more or less.
Also I'd love to see you two doing the longer word list -- something like twenty words? -- that vary markedly across dialects. Always interesting to hear how that plays out.
