I would top this with salsa for about the last ten to fifteen minutes before taking it out of the oven. This looks like one I absolutely must try! :)
Wow, genius! I added some jalapenos for some kick and made some sauce to top it. If you want to go over the top add some chorizo, my mother in law is from Mexico and never even heard of meatloaf. She is the best abuela cocinera EVER and was dubious. But she took a little taste just to be nice. Then she ate the whole thing! Now she lets me cook for her, well whenever she has errands to run, otherwise her kitchen is a no fly zone. I did leave out the corn because I didn't have any but dayum it's good!
I have my coke roast in the oven now 😋
These are the best tortilla chips, Calidad. They are also usually the cheapest ones in the store, so great choice!
You could add some cooked white rice or some cornmeal as a filler instead of the usual breadcrumbs or the tortilla chips.

I am making this tonight and eating it with taco shells..yummy!!! Quick update Hubby didnt want Taco but did want cilantro lime rice, and beans instead. He ate that with Plantain chips and topped with sour cream..He too love meatloaf and was super happy with dinner. Thank you for the meatloaf taco idea..Next time sliced and eaten with taco shells maybe!

Hey Catherine, I made this Sunday morning just passed. I adjusted 2 taste & came it out awesome! I used 4 eggs, red & green pepper, hot salsa instead of tomatoes, 1 whole big onion, fresh corn off the cob, and steamed. Thx. Honey! Did the creamed Italian spaghetti last weekend, awesome, so I'm on board. I, just gotta watch my portion or servings or just stare @ my waist....hehehehehehe! ☝👍👌😎

Wow - I'm not a great cook by any means and this turned out DELICIOUS! The only problem is that I made only 1/2 the recipe using only 1 lb. of ground beef since there's only two of us. Well, it was so good we ate the entire thing in one sitting. Couldn't stop ourselves. Next time I'll make the full recipe so (hopefully) we'll have leftovers!! Thank you, Catherine, for this and all your wonderful, easy recipes!

I've seen your different recipes for different thing's that you have made whether it's for food or for desert i can't make anything now cause of the 💰 I'm broke until july 1st then i can go to town and go to walmart to get the ingredients and subscribed to the channel and i wrote everything down my Roommate will love this cause he loves Mexican food put this in a taco shell and yum 😋
Or a cooked flour tortilla then 😋 or to have it as a sandwich 😋 whatever you like
