    I have never been afraid because I grew up with it, but we canned individual things, as did everybody back then. I was 14 the first time I canned by myself. My mother was in the hospital and I picked, strung, broke and canned 45 quarts of green beans by myself. But you are never too old to learn, in the 1980s I saw my first Ball bluebook! That was an eye opener, I had never canned a "recipe" like beef stew, chili, spaghetti sauce... Other than pickles and relishes everything was single ingredients. Kind of like buying the ingredients at the store for a recipe we canned it separately too. I wouldn't feel too bad about holding the jar lifter wrong, you were so worried and focused about NOT poisoning your family, you didn't have time to think about how it should work. ♥️

    I am glad you get your well water tested; my parents didn’t think to get their water tested because the water tasted fine. They’ve lived 40 years on the farm. 10 years ago my dad was diagnosed with bladder cancer, leukemia, diabetes…a year later my mom was diagnosed with bladder cancer by the same doctor and he said I think you should get your water tested. They found high levels of arsenic poisoning and other heavy metals.
    They are constantly in and out of the hospital. Mom was also diagnosed with celiacs and lupus…..if you live on a well you should get it checked every year.

    O my gosh, that is what why I have such a hard time with that jar lifter. Hahaha, yes sometimes we have to laugh at ourself. Your sure are not the only one. I have been doing a little canning for a couple of years now. Guess I might just be slow. Haha. Just found your site today and I am loving it. You are so delightful to watch and seem very kind and knowledgeable. Thank you for the great teaching videos. You inspire me to do more canning.

    PH strips do expire and there should be an expiration date on the box!

    I love your tips! Thank you! I do have a question. I can my beans without soaking first. Will the salt in the broth be an issue for the bean firmness?

      I personally haven’t seen it affect the firmness. 🙂

    Jars are only submerged in water bath canning they are not submerged in pressure canning.

    Is there a way to acidify low acid foods like beans and meats to get rid of the chance of botulism

      No. The way we protect against botulism in low-acid foods is by pressure canning for the tested amount of time shown to kill the spores.

    I have canned sardines for 100 minutes, they alll came out nice and sealed except one , although was sealed,was popping is it safe ?

      If you can still press down on the center of the lid and it pops, it’s not sealed and therefore not shelf stable.

      Lol it does sound like that! It's a "gleaning" co-op. Basically the "extras" or overstock from farms and stores are discounted and then the cost is shared (& goods divided) among people in the co-op. :)
