I learned a tip from a family that lived in my community. I grew up with them. I am in my mid 60's, so this may seem old-fashioned to some. It is just a sensible way of living to me. They mixed many greens together when they canned their greens to disguise some of the flavors they did not like. That is only part of the story. They were a family of 10. Dad, mom, and 8 children. Early in the morning, they would hook a big wagon on the back of the tractor and head out in search of wild edible greens from all over their land. Once the wagon was piled with a mountain of greens, they would head back home to clean and can the greens. They did this several times during the summer. These greens were a main staple in their household and helped to provide many meals. I still do this to this day only on a smaller scale. I grow greens in my garden, go out and gather wild edibles, mix them all together and can, freeze, dehydrate, or freeze dry my mix of deliscious greens.
I love the fact that you use the digital canner. I have the exact same one & love it!!! Others have you scared to use it because it's the "newer technology " but I find it does great so far.
We love kale and spinach. I have never had any other greens. I do hope to try some soon. Maybe I can do a mixed canner load of a few different types and see what we like. Thanks again for this! Very informative!
Helpful tip.... bring them up to a boil for a few minutes. The water will be yellow and the smell will take your breath away. Pour that off, rinse them and start them in fresh water with salt, bacon or other smoked meat for flavor. Simmer for an hour or so.

It does a great job! Great for those of us who are nervous to put a heavy pressure canner on glass stovetop.

I don’t care for mustard greens as much. But I do love collards. Try those next year.

I like ALL the greens but sometimes the easiest way to work them is is to fix them as a mix of several greens it will help spread the spicy
