Baked Salmon Recipe/ No clean Up

  • This salmon recipe is healthy, light, flavorful and delicious. The flavors of artichoke, marinated tomatoes and the crunch of the pistachios are so addictive. I love that it’s an easy clean up too.
    You will need:
    2 pounds skin on salmon cut into 1 inch pieces/ 4 pieces
    1 cup of baby tomatoes
    3 oz. Marinated artichoke
    1/2 cup of mixed olives pitted/ I used castelvetrano and Kalamata olives
    1/4 cup of raw pistachios
    1 tbsp fresh chopped chives
    1/4 cup marinated tomatoes
    1 1/2 tbsp oil marinated capers
    4 slices of lemon
    1/2 tbsp salt
    1 tsp black pepper
    3 tbsp extra virgin olive oil
    4 pre cut parchment paper
    Butcher twine
    Preparation:
    Make the disposable plates as demonstrated and set aside.
    Clean the salmon from all scales, rinse and dry with a kitchen paper towel. Place in a clean bowl, add the artichoke, tomatoes, olives, marinated tomatoes, capers, pistachios, chives, olive oil, salt and black pepper. Mix well and add a slice of lemon at the bottom of each paper plate. Place the salmon skin side up to keep it moist and to crisp the skin nicely. I tried one with the skin down, it was great as well if you don’t need the skin to be crispy. It’s a preference thing. Add the veggies on the sides and load it. Bake at 450 degrees F in the middle rack for 10 minutes, then turn the broiler on, keep in the middle rack and cook for another 5-7 minutes to crisp the skin more.
