Rookie foragers: make sure they *smell* like onions! Death Camas look similar to wild onions, but are poisonous (hence the name). Camas doesn't have the correct smell, and a v-shaped leaf structure as opposed to wild onions' u-shaped leaf structure. Reportedly they are also terribly bitter, so never ignore a bad taste when using wild ingredients.
No it doesn't? The bitter tastes are from certain compounds which are often found in toxic plants to indicate to predators that they are not edible but there's not a one-to-one correlation.
don't know if anyone has commented on it yet, but onions develop that papery skin because they dry/age for about a year before they hit shelves. thats also the reason we get onions year round! (aging is a form of preservation).
I cackled when you put Alexis Nikole AKA “Black Forager” saying “onion” 😂😂 the eggs & sauté onions looked absolutely delicious 🤤 anywho I learnt something new today! Thanks chef Jon! ❤
In germany we call them Schnittlauch, in englisch that means cutting leak. They are very tasty and you can even by them in the stores. They taste like a Mix of garlic and onion. It is a very tasty topping.
I‘m European. And I’m always amazed how I learn so much about our edible “weeds“ here. Like last year, when I cooked garlic mustard for the 1st time after learning in one of your videos, that it’s not just a weed you pluck and throw on the compost 😂
Yes, to all of this, and the sentiment, _"Thank you for the free food, dont come back now!"_ Honestly, I need this quote on my porch as a not welcome rug!
I remember pulling those in the forest preserves in IL and just munching on the bulbs. Not sure if that was advised or another notch in the belt of me being a strange child.
I'm convinced that there's like innate knowledge to being a human child that makes you a good forager. You're just curious enough to put edible looking plants in your mouth and only come back to taste the good ones haha
@@jukeboxxgamer I will agree. I remember seeing berries as a kid and remember thinking "those are just too bright" and I left them alone . It was a good thing I did
@@MatthewTheWanderer, I ate foraged food as a kid all the time. We had been shown what was safe. Wild onions taste great on a sandwich. These days I cook with them as well.
@@bcaye Well, at least you were shown what was safe first and didn't start randomly foraging on your own. I was never taught anything about foraging ever. So, that, plus how you never know what pesticides may or may not have been sprayed on the lawn or what animals may have pissed or shat on it, I have no reason to trust wild plants. I'll stick to store-bought onions.
I think that's called dal-lae (달래) in Korean. as a kid, we'd pull them from the edges of neighbor's yards on walks with my grandparents. they probably thought we were so strange for weeding their lawns but it's one of those first signs of spring sort of veggies. Delicious in a quick kimchi'd topping for bibimbap or even plain tofu :)
I don't forage in the wild anymore but I have a little patch of these plus wild sorrel and violets. A lawn treatment guy came up in my drive to ask me if I wanted to sign up. "Why?" "Look at all this trash and weeds!" "Those are henbit, that's wild sorrel, those are violets, those are grape hibiscus and that is spider wort and butterfly bush. You want to kill all these off so I only have grass in my yard?"
I just noticed these in my yard a few weeks ago!!! I commented to my husband they looked like miniature green onions, and I broke off the ends and smelled it and it smelled like onion too! I wanted to look up what it was and forgot all about it until happening upon your short. So grateful to finally know what it is!
Free tips for wild onion grass! 1: Chill them (not freeze) before cutting for easier usage 2: They go great in stew and soups 3: Wild onion is almost unavoidable on the East Coast of the US. From Maine to Florida, it's available anywhere there's grass
When you said, "I don't like anyone that shows up to my house uninvited unless you are delivering mail or a package." And i thought to myself, if they are delivering a package then arguably they were invited
Just make sure if you harvest these that there arent any pesticides that have been used on that land recently! If its your own yard and youve not used any pesticides, youre probably ok. If its some random area you are foraging in, please try to make sure it wasnt recently sprayed as sometimes that stuff doesnt come off even after a good wash. Some are designed to be resistant to rain, and they can be very toxic as theyre likely not the kind thats safe to put on produce (since theyre treated as weeds and not to be eaten). Stay safe! ❤
in south korea it's called "dallae" used to make muchim(korean salad) or as a mixture of soy sauce, red pepper flake, sesame seed, sesame oil to make "dallae-jang"
As someone with parent who’s a veteran military retiree and has taken up farming post retirement I believe the information my father would provide her is that they didn’t have any skin because you freshly harvested them and didn’t leave them to sit and cure for a few days which is apparently the process in which onions form the skin
I remember picking these as a kid in the Bronx...yes the Bronx lol I was so surprised and excited when I first discovered wild growing food in the concrete jungle. 😊❤
Everyone who's able to should forage. Foraging does so much good: good for the environment, good for food cost, good for nutritional value, good for plant expansion (not entirely related to the environment reason, more like plant diversity). I used to be an avid forager until I became a bit too physically disabled to do a day of walking/hiking around (was in an accident that messed up my spine and knee) but I highly recommend it.
they also make for scrumptious kimchi that pairs beautifully with jjapagetti! i never thought about incorporating them into eggs but this looks yummy 😊
Hey, not all are invasive to North America! Those probably were, but there is a very similar species that are natice to NA, and personally I find them tastier.
We used to have a ton of this grow on my grandmas lawn. We would pick it and have it in various dishes. She also had strawberries still growing from when there was a farm on her property and she had a pear tree.
In Austria we call that “Schnittlauch” - I love it as a garnish in soups, it’s also popular on buttered bread (I don’t like it at all, but most people I know like it)
I used to find these all over when I lived in Long Island NY. I moved to the Catskill Mountains and now I don’t see any anywhere! I used to pick these and the fiddleheads from young ferns and sauté them together with a little salt.
Live on 4 acres of land here in Ohio. 90% of my lawn is onion grass and garlic. Amazing in the spring/summer. Walk outside and that's all you can smell. Onion and garlic
Haha that chopping face is probably why my grandma thinks I'm angry when I cook, the laser focus doesn't leave room for me to make any other face
It's funny cause I actually caught myself in the mirror the other day while chopping and I looked exactly the same 😂
I do the same thing but instead of cooking I'm crocheting 😅😂 my mum loves taking sneaky photos of me to giggle at later
