I lived on St. Croix in the late 1970s. Went back there in 2005 and it was a very different place. There were still many houses with no roofs and blue tarps for walls. I remember how poor the native islanders were. Bet there aren't too many natives left at this point. Every time a big hurricane destroys stuff the rich tourists buy the land and make it into an unaffordable luxury resort. Sad, really.

The diversity combined with historical internal conflicts, wars, natural disasters, and famine, make it "eat anything" as both a necessity as well as the skills to make anything taste good. :)
