How to make Coco bread| Cliffy's Kitchen

  • In this video we show you how to make Coco Bread. A Jamaican specialty that is commonly paired with Jamaican patties.
    Ingredients:
    Flour: 6 cups
    Water: 1 Cup (80-90 degrees F)
    Butter: 2 tablespoonsful
    Active Dry Yeast: depends on the quantity you will be baking.
    Salt: 1 1/2 teaspoon
    Sugar: 2 tablespoonsful

    Lesson and myself just watched you making the home-made coco bread! That's the real thing. All those who are out there fooling around making coco bread need to watch this video. One of those hot ones would do me good right now! Yum! yum! Mouth-watering! So easy..this is a MUST!!

    I love this video, I had not heard of coco bread before, i am from Wales in UK.
    I saw it while I was looking how to make hard dough bread.
    I really enjoyed this, you have a lovely voice that i could listen to all day and a very nice way of patiently explaining everything for people new to this recipe. 😊

    These coco bread looks delicious. Great video explaining each steps. Can you use coconut milk instead of water?

      You most definitely can. In fact, that is the original way of doing it and how it got its name. If you have the coconut milk feel free to use it probably in a 60:40 ratio with water to make them last longer than just straight coconut milk.

      The proper recipe includes coconut milk.

      Yup. But it doesn't matter if it's brown or the white one.

      It should matter brown sugar will give it more of a caramel taste.
      You’d have to burn white sugar to do that lol

    Looks nice, but to bad udk how much yeast is used. I thought baking was a science and we needed the exact formula...

      If you use less yeast , proof longer. More proof less.
      1.5 teaspoon should be enough for 3 cups of flour.
      But his recipe says 1 cup of water to 6 cups flour. That is wrong.

    This isn’t really coco bread because you used water. Not even milk or actual coconut milk. It also turned out very dry in the video because you used 6 cups of flour and only 1 cup water. In baking that’s about a 30% hydration level for the dough which will end up being a very chewy and dry bread. Then you put even more flour on the dough throughout the video. For people reading this, use bread flour for a better texture add 2 cups of water or 480g if your using 6 cups of flour to be at a hydration level of about 65% which will make your coco bread softer and way less chewy like this one. Also add real butter not margarine for better flavor. Good luck.

      Hi Christian, I used 1 tbsp of yeast for this recipe. Originally, coco bread was made with coconut milk, that's how it got its name. If you'd prefer to use coconut milk, please feel free to do so. Happy baking!
