These look great. What you've really made is "speculaas cookies." They're German/Dutch spice cookies that are made during the Christmas season. They usually include cinnamon, ginger, nutmeg, cloves, cardamom, and white pepper. I know a lady who has won many blue ribbons for her speculaas cookies. Her secret: Mix the dough and allow the cookies to sit in the fridge for at least 24 hours. This allows the spices to bloom and develop more flavors. It's a kick-ass cookie for the fall and winter months.

If you know anyone going to Mexico, ask them to bring you back a bottle of real vanilla from there. It's night-and-day from the grocery store fake vanilla from here, and costs less than the 'real' stuff sold here. It's one of the best gifts I've ever gotten.

Actually Chef John there is a great coffee beer made in Houston called Rocket Fuel. It's by a local brewery called 8th Wonder and it's a great mix of beer and Vietnamese coffee. You should try it if you can.

Room temperature is pretty cold here in the winter! I usually end up microwaving the butter very carefully so that it's easier to cream

hello chef. so at 1:00 you said baking soda+cream of tartar=baking powder. does that mean baking powder is a substitute for those 2 ingredients? I can't find cream of tartar anywhere in stores nearby

I would substitute both the soda and tartar in this recipe with 1 tsp of baking powder. That's generally the accepted standard. It would be nice if Chef John put that in there though
Kimilisaaa Films you should find cream of tartar in the baking aisle. Maybe with the spices. It's used for meringues and other desert recipes.
I have found cream of tarter in the aisle with all the spices in fact, because it's often made by several of the same companies, same size containers, and so they're tossed in with the rest. If they arrange it by alphabet I've seen it either in Cs or Ts. .

Sure thing. Its the blend of spices traditionally used to flavor pumpkin pie and such, just as you may have a chinese five spice mix or a gingerbread spice mix. When you refer to it it evokes a certain set of spices which cooks can refer to and add to their cooking/baking in varying quantities.

the spices mentioned (cinnamon, allspice, cloves, nutmeg) are popular to use in sweets WITH pumpkin, so they are "pumpkin spice'. So it's not "pumpkin" flavored, it's "pumpkin spice" flavored. It's a little confusing.
it's supposed to be all of the spices added to a traditional pumpkin pie (generally cinnamon, ginger, nutmeg, allspice, clove), so no actual pumpkin in the spice blend. but yes, it is madness :D

Yes, that does mean many random food items with pumpkin spice in they have no pumpkin.

Great recipe Chef John also quick question what type of baking tray is that you use? I ask because I noticed the cookies didn't stick on the tray like other baking trays.

David Marrero he uses a silicone liner inside his baking pan. You can also use parchment paper.

What size sheet pan do you use? My ovens only can take a 1/4 pan.
John G Chef John is using a 1/2 sheet pan here. You could certainly use your 1/4 sheet pan but with a smaller amount of cookies, keeping them similarly spaced apart otherwise the cookies will bake into each other.
