Chef John... my experience with this recipe! 😂 REVEAL: My neighbors wouldn't stop raving about this carrot cake that I made. I don't bake much, but this was a hit! CONFESSION: So a while back, I tried to invent a pecan praline with a twist. You know how good sweet pepper jelly is, right? And jalapeño candy and ice cream? So I thought I would make a jalapeño pecan praline. Since I'm not experienced as a candy maker, it just didn't turn out. So I had this big batch of very hard, peppery clumps of sugar with embedded pecans. It wasn't bad, just too hard and too sweet. SOLUTION: I put the failed pralines away and stored them for a few months. So when I later decided to make this carrot cake and began to buy the ingredients, I remembered that I already had pecans in the pralines, so I decided to use them in the recipe... I could also dissolve the sugar from the pralines for the recipe, too! It slipped my mind that there was also jalapeños in it. RESULT: So the carrot cake turned out to be really, really good, as my neighbors attest. It just has a certain spark. The flavor is just faint enough to be indefinable. Just a touch. So that's my secret ingredient. 😜 DON'T TELL MY NEIGHBORS.

Had my husband give this a go for my birthday. He was iffy on veggies in cake, but admits it's delciious. 10/10! I also had him add a couple tablespoons of Baily's Irish cream to your cream-cheese frosting.
I follow this recipe for the last 2 years now. It is simply unbelievable!! I do only 2 small changes (chemists we have little habits!): I don't use coconut oil (instead I put sunflower oil) and the walnuts I put them in the oven for like 4 minutes to bring out their sweetness. The frosting goes with reduced sugar (ladies are always on diet over here..) So many friends of mine asked for this recipe, it's like a tradition already! I pass it on and people are just having the most amazing time EVER. I love your recipes, John! And your blog

I've always topped my carrot cake with a yogurt buttercream frosting. Make a buttercream and substitute unflavored yogurt for the milk or cream. It's outstanding and the _slight_ tartness is a nice counterpoint of the sweet cake. People who have tasted it absolutely love it.

After it went over so well with coworkers and friends, it became a staple that I have used over and over. I find that it becomes a refreshing substitute for frosted sugar cookies in the summertime.
I want to thank you for mixing it all by hand. Not everyone has all the fancy mixers and it's nice to know what it looks like without the use of a mixer.

i made this last night! really good...soft with a deep flavour. loved it. i used olive oil instead of butter. the coconut oil gave it a wonderful smell while baking and added to the flavour.

Followed your directions to the T. Fantastic!!! Took a bit longer to bake in my oven but still turned out great. Very moist, very dense, great carrot cake. This is my all time favorite cake, my recipe is similar to this except I don't use pineapple or nuts, I use WAY more carrots, and add cardamom as a secret ingredient :) Can't wait to try this variation out!

"....a grate job". Love your videos. I use a combo of 'shredded', not grated, carrot and zucchini. I slice the zucc lengthwise into 1/4's and take out the seeds. Using both makes for such a moist bread and 2 for 1 bang for your buck veggie wise. Have also used carrot and butternut squash but do grate the butternuts. Cooking is a JOY and your videos encourage the joy.

I've also had a chocolate zucchini cake which was awesome!!! And it came with a chocolate cream cheese frosting which was even more decadent. A co-worker and I were on a course and went out for dinner, took one bite of the cake and told the server "we want the rest of the cake". We had to pay for it by the slice but the rest of the group really enjoyed their surprise late night dessert.

my mom made me carrot cake for my 21st bday. it's my second fave cake, with the first being german chocolate. this recipe looks delicious..especially with having more than just one type of nut throughout...I love the texture that walnuts and pecans give to all my fave desserts. fudge brownies especially! nut-less brownies is for the devil.

Using both makes for such a moist bread and 2 for 1 bang for your buck veggie wise. Have also used carrot and butternut squash but do grate the butternuts. Made it. Just replaced the butter and coconut out with 3/4cup vegetable oil and made it in muffin tins. Yummy yummy 🤤

I've also had a chocolate zucchini cake which was awesome!!! And it came with a chocolate cream cheese frosting which was even more decadent. A co-worker and I were on a course and went out for dinner, took one bite of the cake and told the server "we want the rest of the cake". We had to pay for it by the slice but the rest of the group really enjoyed their surprise late night dessert.

my mom made me carrot cake for my 21st bday. it's my second fave cake, with the first being german chocolate. this recipe looks delicious..especially with having more than just one type of nut throughout...I love the texture that walnuts and pecans give to all my fave desserts. fudge brownies especially! nut-less brownies is for the devil.
