    I’m Thai and I live in Chiangmai. I can say , this’s the REAL Kao Soi that’s we love! You have done such a beautiful meal! . Even I’m Thai but I never make the paste before . Almost of us using the instant one 😂

      Agreed, I'm Thai and I'm from Chiang Mai also. I've never made Kao Soi chili paste myself before. It takes too much time to prepare and we always ended up buying the paste from the local market.
      What that all being said. You've done an amazing job!

    My mom and I are headed to the Asian market tomorrow to make this soup for dinner! I’ve been a chef in America for a long time but have never had good guidance on Thai food, am so thankful for you, Marion!

    Made this yesterday and hubby really loved it! I didn't have wonton wrappers so I fried the same (thin) egg noodles as garnish which worked well. Thank you Marion you make cooking look so easy.

      @@tiptop7327 and from thai too, Myanmar nowaday has a quite similar dish but not the same, That's why khao soi IS thai dish, The same reason as massaman curry, Which was originally india, and Thai people made it into a separate thai version similar but not the same

    I had the pleasure of finding a woman in Bangkok who made this soup. I tried it and was one of the best soups I've ever had. The taste was amazing. She has been serving this for 44 years and perfected it. Your recipe looks very good so will give it a try

    I make something similar to this with prepared Thai red curry paste and spaghetti squash for the noodles. The texture of the “noodles” worked great with the spicy, creamy sauce.

    Had Khao Soi for the first time in Pai, a few days after leaving Chiang Mai. Crazy good soup. One of the best things I've ever eaten. Same goes with all southeast Asian cuisine honestly. Laos and Vietnam especially.

    I live in the Bay Area in California and despite having dozens of amazing Thai restaurants, you rarely find khao soi on the menu, so I can't wait to try this recipe! When I first had it, I was blown away by how good it was! Thank you!

    Nice! My recipe is similar. I just use flat wonton noodles and reserve about a quarter to fry for the garnish. And for spices I use only coriander seeds and Thai cardamom. And no lime leaf and no shrimp paste. And a hint of curry powder (it’s a dirty little secret I learned from a chef from Chiang Mai, believe it or not!). It completely lifts the dish and brings everything together. It’s a total “je ne sais quoi”. Crazy!

    Wow, I found your channel yesterday and today you cook my home's food. That wonton warp thing is really a genius idea. For the noodle you can substitute with soba or pasta noodles. They're pretty close if you could find a freshly made one. Also, I alway add some brown sugar at the end. I used to live in UK for a year and US for another 5. Finding an alternate ingredients is kind of a hobby of mine.

    I eat this noodle soup here in California almost every week coz I love it. I spend a lot of money though and this is a good way to start making my own. Our Thai restaurant here serves this noodle soup with boiled egg and crushed peanuts on top of what you have garnished yours with. Thank you for sharing your recipe!

      It is so good!! I buy stuff from amazon and I have not had any issues yet. You can find some things at World Market or Whole Foods or Trader Joe’s if any of those are near you. You have to make this!

      Absolutely delicious👌👌👌 I did overcook my noodles so that was my bad but the soup is absolutely flavourful and comforting..just a perfect bowl of noodle soup with not a thing out of place..just like in the recipe , I did made a double batch of the paste and made the next batch with chickpea which I served over jasmine rice and grilled eggplant.. HEAVEN👌👌👌

    I spent a month in Thailand (best trip of my lift) and this was by far my favourite dish I had while I was there! Its also so specific to Chiang Mai that its almost impossible to find it at any Thai restaurants in my city :(

      Don't forget that you can use store bought curry paste, so then you only need chicken, coconut milk, chicken stock and toppings.

    I'm going to make this as soon as finals are over! I WILL be using drumsticks though, tbh fishing en entire drumstick out of the noodles and soup is my fav part of kao soi! Thanks for the great video, I always wondered what those greens were on the side and now I know to look for pickled mustard greens!!

    How spicy is it? Asking cause my fam doesn't like spicy, but I love it!!

      Typically, it's spicy for foreigners because of how they aren't used to spiciness(chilis). So no one really knows how exactly spicy it is for anyone. So, if you have a tongue that's used to chili then you'll need a bit more chili to get the same level of spice normal tongues tastes. Basically, if you don't try, you won't know. Good luck. ;)

    I made this fantastic soup tonight for dinner. It was wonderful. The family really enjoyed it. I was a bit concerned about the amount of broth it made, but, there are no complaints, I will get to have leftovers. 😀Everyone loved the crispy noodles. The soup was great with a touch of sambal oleck chili paste for some added heat.
