- 桂花糕的主要食材:粘米粉180克,糯米粉75克,白砂糖60克,煮开的沸水120克,红糖10克,桂花干6克。
注意事项:糕粉倒入容器中,一定要轻轻的抹平,不能去压,上锅蒸的时候,最好是用竹制的蒸笼盖,没有的话,要用纱布把锅盖抱起来,这样就不会有水蒸气滴入糕粉中。
蒸完后,要趁热吃,凉了就会变硬,要吃的时候,再蒸几分钟!
The main ingredients of Osmanthus cake: 180g rice flour, 75g glutinous rice flour, 60g white sugar, 120g boiling water, 10g brown sugar and 6G dried osmanthus.
Note: when pouring the cake powder into the container, it must be gently troweled, and cannot be pressed. When steaming in the pot, it is better to use the bamboo steamer cover. If not, use gauze to hold up the pot cover, so that no water vapor will drop into the cake powder.
After steaming, eat while it's hot, it will harden when it's cold. When you want to eat, steam for a few minutes!

Hello! I have just tried this recipe this morning, and I must say the flavour was really lovely, yet not overly sweet (coming from my parents who are sensitive to sweetness)! However, my cake turned out a little dry and rather tough, any advice on how I can make it more fluffy and soft? I followed the advice of not pressing down the flour mixture, but it still turned out pretty tough :( Could over-steaming the cake make it tougher and drier than supposed? Still, thank you to Miss Yan for the lovely recipe! :)
Do you follow the method in my video? This pastry is very fluffy, not hard. If it's hard, you can steam it for a while, maybe it's not cooked!
I think it's cuz you pressed the flour mixture? Also, check the moisture content of your flour mixture, it should feel like wet sand.

你可能有的面粉没有水分,就是面粉加水抓拌的时候,有的面粉没有吸收到水分
