Ingredients -
500g (1.1lb) - Rigatoni or Penne
2 1/2 Tbsp (30g) - Unsalted Butter
1 - Brown (Yellow) Onion, Diced
5 - Garlic Cloves, Paste
130g (4.5oz) - Tomato Paste
1 tsp (2g) - Chilli Flakes
400g (14oz) - Crushed or Diced Tomato
3 Tbsp (60ml) - Vodka (Sub for Vegetbale or Chicken Stock)
1 Cup (250ml) - Thickened Cream
Seasoning To Taste

@Legnan01 alcohol takes hours to evaporate. Plus religions and many other reasons as to why some people don’t want to have it or can’t have it

If you're not using wodka, add about a 1/2 tsp of powdered ginger when you re-heat the sauce... not traditional, but it brings a bit of "back of the throat" heat, like the wodka would have done.

This is a great video, you have a lot of interesting recipes. I have a very small kitchen and can only keep a few ingredients on hand, what are some of the core ingredients you always keep handy for your recipes?
Instead of using a food processor or a blender, you can pass the sauce through a strainer. It's easier. Keep on rolling (cocking)

Hmmm, given that most of the vodka is intended to evaporate off and leave behind its flavor compounds, isn't this generally done pre-tomato being added so it has more access to the direct heat for evaporation purposes? Seems like being added to the post-tomato environment would simply just end up leaving the vodka almost in its entirety.
Tried it a few different ways over the years. You get the best flavour this way. Alcohol takes hours to cook out so it will always be there. Of course you can use it to reduce after adding the tomato paste but I recommend trying it this way 👌 it’s good

I have never tried this recipe, but I think mine is better. Pancetta, garlic, onion, tomato paste, dried chili, vodka, cream and LOADS of parmesan. The pancetta is a must in Pasta alla Vodka in my opinion. Will probably try this one out of curiosity though.
Just a query, if i make just the sauce for the pasta how long would it last in the fridge so that i could use it at a later date , also my mum wants to know if she can cook it for only 1 or 2 people so would she just halve the ingredients?

Quick question sort of unrelated to the video but when I make rice in my rice cooker it always becomes like sticky rice. what could I do to make it more fluffy and less sticky?
If you aren’t already, before you put the rice in, shift it in a fine sieve with water a few times, it’ll draw the outer starch out which lends a lot to the stickiness

I dont get it. The dish is called pasta alla VODKA. Meaning it has alcohol. Why substitute it , then its just plain pasta with tomato? Im just 😕 confused
Because not everyone can consume alcohol. I make my dishes to cater for everyone. If you do consume alcohol it’s not an issue for you
@ChefJackOvens yes I'm aware of it as I'm unable to consume certain things. I just don't cook it as that might alter the actual taste, thats all, if it makes sense

Yep try it. It’s beautiful. There’s a reason the pan stayed over a medium heat most of the time and I explained that you need to sweat off the ingredients which is cooking without colour. It’s the technique to extract the most flavour without burning
