  • Chicken Broth
    This particular broth is rich with flavors and a versatile base that can deliver taste to any number of dishes, especially for the use in soups like Khao Piek sen (chicken noodle soup) porridge, ramen, udons, and more. This broth is made from meat, vegetables, and herbal spices.
    Ingredients (Serves 6 to 8)
    24 cups of water depending on the size of your stock pot
    1 to 2 tbsp. of salt
    ¼ cup fresh ginger, chopped or slices
    1 to 2 stalks of lemongrass, cut into 3 inches long and mash the lemongrass with a meat tenderizer or the end of your knife to release the oil and aroma of the lemon grass.
    1 whole regular white garlic
    1 small white or yellow onion cut into halves or quarters
    ¼ cup of fresh turmeric, chopped or slices
    ¼ cup of fresh galangal (you can use dried slices of dried galangal) chopped or slices
    2 whole black garlics (optional)
    1 bunch of cilantro stems or roots (optional)
    2 pounds of chicken (can use whole chicken, breast, thighs or other parts of chicken would work)
    Instructions:
    1. Add water to the stock pot.
    2. Season your water with salt.
    2. Add ginger, turmeric, onions, lemongrass, galangal, cilantro stems, garlic, and black garlic.
    3. Bring water to a hard boil then add the chicken.
    4. Cook the chicken for 30 to 45 mins at medium to low heat.
    5. Remove the cooked chicken to let it cool and then shred the chicken to your liking sizes.
    6. Return the shredded chicken into the pot.
    7. Your broth is ready to make your favorite soup.
