I would have two handholds placed at the bow because if you get overweight when maneuvering in the harbor you have nowhere to hold on to and the propeller keeps turning. Until it comes to a standstill, you are suddenly minced meat. So better safe than sorry. You can expect icing in winter. I lived in Norway for a long time. Always a hand for safety. There's nowhere to hold on to the wide bow parapet. Safety rarely wins a beauty prize, but means less costs for a funeral. At sea, small mistakes become tragedies. I wish you both a good future. For your little anchoring "problem", you can use a selfie stick with a mirror (easy fix).... or, it it be still possible, to instal a camera above the pocket (like a door bell camera) and drop the anchor fully remotely from the pilot house with the video on a screen for control.
@@NautiGuysI was thinking something like the "Garmin Surround View Camera System" or the "Raymarine DockSense Control assisted docking system" which can help you when you're maneuvering short handed.
Regarding the wired remote: Can you have them put a cable reel in there that will retract the cable and lock in place so that you can pull it out to the desired length, give it a strike tug, lock it in place, then you won't be having to hold the pull on it. But then when you want to go back, you can just give it a tug, release the lock and let it roll back in. Hope I explained that good.

Wired remote needs to be able to be unplugged and moved to plug in at a different location. Don't want to be giving tugs on it to lock/unlock it because the wires could get damaged and pull out, and you don't want to accidentally put tension on it and release the lock and have it pulled out of your hand when trying to dock when your hands are sweaty or wet with rain.

well, the easy answer is to install a mini camera on the front of the boat for the anchor so you can watch from your phone anywhere from where you are. then watch the anchor go up or down from anywhere in the world. and or also put a .GPS tag on the anchor.

I had to look up fairing compound as it looked like auto body bondo but bondo will absorb water so fairing compound is epoxy, polyester, or vinyl ester a water resistant blend of products that can be used below the water line.

With regard to the anchoring I can only advise to get the non wired remote controls for every part on the boat, so that means thrusters, engines and anchor. You will love it when you have it, makes your life so much easier and then you don't need the wing stations. What size chain will you use ? And is the windlass able to take the stress of anchoring or do you need a snubber ?

Portable Cameras, suction cupped on,(as much of the structure is Aluminum,and will have wood trim), will aid when docking, and keeping track of guests on the water. You have stationary, but will want moveable. Some guests may want recordings of their parties and these will allow you to help do that while you're busy.
To see the anchor pocket, just put a mirror on the end of a stick-maybe a makeup mirror on the end of a stiff fishing rod. You won’t have to lean over to see the anchor.

When docking stern or side to you would have a deckhand with a radio communicating with the captain. So you don’t need to have full sight as captain.

One thing we did for more visibility is put a convex mirror at the end of a pole or any mirror. Then just hold the pole out till you see the pocket.
