I skim the impurities off so they don’t stick to the oxtails when I drain them. I would have to rinse them off before returning them back to the pot. Just keeps a clearer broth to me.

I would cook for 4hrs instead of 3hrs
The guy used the microwave as timer, nothing else. What a waste of electricity. He even has a stop watch on his wrist.
