Looks a lot like the recipe at the old Kam-Bowl, in Kalihi. Only went there about 10 times, but ALWAYS got the Oxtail Soup. Yes, I DO miss it! (I left in 2000, and haven't been back.) THANKS! steve
This recipe is very much like Kam bowl's, except that Kam Bowl's recipe had dried orange peel instead of fresh lemon peel, and half a cup of dried, raw peanuts in the broth. Add a bunch of cilantro to the bowl at the end. For dipping sauce, it was soy sauce with grated ginger.
the cartilage is considered a medicine for healing spine/back pain (or any joints) The ladies who make awesome local food at Aisles Cafe, next door to Suisan Fish Market in Hilo, grate their ginger instead of matchstick, and serve it on the side for customers to season to taste- just like you do, but grated instead of julienne. I love the Cartilage! But cooking at restaurants I get so many requests to trim fat, cut out things and it's just crazy how picky people are. To be honest never tried cilantro in my ox tail. Next time I make it I'll be sure to add it ☺️.

I find distilled water is best for meat to rest in - a very pulling water; or else I use husband's alkaline water machine - between 8.5 and 9.5 ph.
nice recipe! You forgot the cilantro!😂. .for the sides I like to chop up cilantro and ginger.
Yeah! I like to do that when I make Pho! Cilantro, Mint, Parsley. It's a great side for oxtail also. 😀

This soup cannot get any worse.. all the flavours are gone in first 2 mins.. it's obvious you need to get skim the fat out.. I'm sure it's terrible.
