But it will also make gas and easily explode the glass jar. At least don't squeeze it down to bottle it. Koreans usually make kimchi with a big batch, so we like to store it in smaller portions to make it easier to eat casually. @@obarasama it’s nice to have multiple recipes to reference and recipes with a step by step of how to make something that isn’t the traditional way when you can’t eat a dish the traditional way. Sometimes the ingredient that people are allergic to is a main component for flavor, so if you don’t always cook, it’s hard to imagine making something taste good without a main ingredient. There’s many different reasons someone will want a recipe instead of omitting the allergy. Hope this helps
You make me want to try and makes some. As a person with a shell fish allergy I'm grateful to have only come across what i now know is the vegan version. I only learned a few months ago that traditional kimchi has seafood in it. Now i have to ask when i go out if its vegan or not it could save me a huge problem
I’ve tried both vegan and non vegan kimchi- they tastes pretty much identical I will say that the umami is different in each- one has more of the fish umami and the other as usually mushroom BUT both are equally delicious! Also- the taste is near identical in regards to spice, texture, and most of the flavor. It’s simply a slight difference of it tasting more fishy or more earthy. Kimchi and other banchan developed at a time when Korea was majority Buddhist and it was literally banned for people to eat meat/animal products. Store it in ceramic containers that doesn't put much pressure. In India we made pickles since generations. Always used large and medium ceramic storages and use cloth to tie over it and then cover. In a week time, we open and let out air. Its best to avoid any excess pressure building up
I also add water drop-wort, Saeujeot, and I dont use a blender to make the wet rub. I heat it up to get the flavor out and then I do the rice flour mixture in the same pan.

Indeed. I think the stigma really started to come in hot when people tried to invent cheap (and unhealthy) vegan substitutes for meat and animal products with chemicals added for taste and texture. And I fully support this stigma, because it’s just bad for you. Vegan food should be like this, real and healthy and authentic food that everyone can enjoy. Not everything has to contain meat.
This recipe is what I’m familiar with, and it’s fantastic if you like spicy pickled veg. I do. But the best Kimchi I have ever had is radish kimchi, especially with Korean radish or Daikon, two of my all time favorites. If you’ve never tried some, even if you don’t like radish (Korean radish is next level and not what you’re imagining), it’s life changing.
I love kimchi! Looks delicious. I can't have shrimp, sea animals, other than fish with fins, and scales, so I've been buying a plant based one, with live probiotics, it's so good, but expensive! My Husband, and I literally will eat it with every meal, until it's gone! I prefer to make everything from scratch, but couldn't find a kimchi recipe that looks appetizing, without ingredients I can't have, but this one will work fine. Thank you! ❤😊
