When holding the crochet hook as you work, assuming the hook part that sticks out is considered the 'front' of the hook, a yarn over touches the back of the crochet hook first. A yarn under touches the front or belly part of the crochet hook first.
When the colors will create an intricate design, I generally stick with a simple stitch like plain, regular single crochet. Or double crochet. Some people do the corner to corner stitch pattern, if the colorwork is designed for it. That pretty much is just double crochet stitches.
