    please reply with what reference you used for the12:1 ratio. I haven't seen that in the FDA''s home preservation book, nor the ball canning book. I know a lot of universities have their own publications on canning, so was wondering if you used one of those. Thank you!

    Thank you for this video and recipe! Would you please consider including the recipe in the description? Also, a question, if your using the 12:1 ratio to assure acidity, why do you still need to add the lemon juice?

    I have no canning stuff but I wonder if it's possible to cook it for 40 minutes in the pot like you did and then pack it in vacuum-sealed bags for freezing?

    If you have a freeze dryer you can take the tomato skins put them through freeze dryer n then grind to make tomato powder!

    We don't use Rotel a lot and I'm not a canner. Is this something you can make in small batch?
    I've not seen anyone make homemade Rotel. This was awesome! Thanks for sharing. 🙂

    Thank you for sharing this recipe, we've been canning forever and we decided to start making our own rotel, if I use the 8oz jelly jars would it be only one table spoon of lemon juice?

    What do you do with the left over tomatoes you may have? Do you have to have the jar full to can?

      Most of the time i like to can full jars. I just put the extra in a jar and put it in the refrigerator and use it within a week.

    I didn’t watch your video first and blanch my tomatoes and then put them in the food processor and purée them. Is it safe to do this recipe with it.

      It will be fine. It just won't have any chunks of tomatoes but will still taste good.

    Angela, I was gifted a bushel of tomatoes today. I really want to make this recipe. I have a question. I plan to pressure can mine. DO I still have to put the lemon juice or citric acid in the jar and do I still have to stick to the ratio of tomatoes to onion/pepper since I am pressure canning. ALSO how long would I need to pressure can pints? I do hope I feel good tomorrow, after church, I want to at least get my tomatoes peeled and cubed. Then hopefully can the mixture on Monday.       Wow that is an awesome gift. If you pressure can you do not need to use the lemon juice or stick to the ratio. You would pressure can them at 10 pounds pressure for 15 minutes for pints. We are praying for you.

      @@artofcreationhomestead Thank you, I finally got all my tomatoes done they are awesome I pressure canned them. I did not have coriander I have some ordered just in case I get more tomatoes. I don't think I made mine hot enough next ones will be hotter. I love hot. I am so glad to get this recipe I can eat it on my new eating plan. Finally, I have some of my medical results and My dr said I have severe fatty liver disease. It is not Cirrhosis yet and she said if I do the Keto diet I can turn it around. Please pray for me I can do this, God is good and still in control. I am a 14-year stage IV Breast cancer survivor.
      I also canned some Appricot (dehydrated) Habanero jelly with Pomona pectin. It came out wonderful. With Pomona Pectin you use about 50% less sugar.
      I love your new funnel and Dipper. I have this set and the dipper holds the perfect amount. The funnel you can see the level of the product. Thank you and Jason for all you do.

      Angela I’m a newbie and my hubby and I are pressure canning our Rotel too.
      Our question is do we have to bring our diced tomatoes and peppers up to a boil and simmer for a while or do we just put them in our pint canning jars and process for 15 minutes at 11 pounds of pressure? I need the 11 pounds of pressure because of where we live and we have a gauge canner.

      Yes you can. If you are just canning yellow tomatoes by themselves with no red ones mixed in then I would add a little splash extra lemon juice to up that acidity level. I can them every year mixed in with my red tomatoes.
