Making and Canning Homemade Ro Tel ~ Noreen's Kitchen

- Greetings! Canning season is in full swing in my neck of the woods. Today I am making and canning, homemade Ro-Tel. For those of you who may not be familiar with Ro-tel, it is a delicious combo of tomatoes and green chilies. Usually used to enhance a chili recipe or most popularly to add to a nacho dip along with some processed cheese.
I was able to source some Hatch green chilies and for anyone who is from the southwest knows, this is the time of year for those mild, fragrant chilies. In New Mexico and Arizona you can find farmer's markets overflowing to the brim with bushels upon bushels of these beautiful green chilies. You will also find chili roasters which look like large mesh drums turned on their side and set over an open flame, usually a gas or propane flame, but I have seen them done over wood fueled fires. The roaster will fill the drum with fresh Hatch chilies and begin to turn it, tumbling the chilies over the flame, making them dance. In a short amount of time the chilies have turned black and blistered. This is when they are turned out and allowed to steam so the skin can be easily removed. In many cases, the peppers are placed in plastic bags and sold while hot. By the time you get them home they can easily slip out of their skins. Such fond memories of the southwest and the smell is intoxicating. Nothing like chili season in New Mexico and Arizona!
Home grown tomatoes are the base for my Ro-tel along with those green chilies and some onions. In order to maintain the proper PH for waterbath canning, I have added some white vinegar (you can use cider if you choose) some sugar and a bit of canning salt. Simmered a good long time and then jarred up and ready to process.
I am using Tattler lids for the first time today. After many years of wanting to try them and actually having been gifted a couple of boxes over the last couple of years, I was just a big chicken. Just like with my pressure canner, I was going kicking and screaming. However with recent changes to the Ball jar lids I have become aware that it was time to give these Tattler reusable lids a try. I will be doing another video with my thoughts on the process. In the end I love them!
So that is how I made my homemade Ro-tel tomatoes and chilies. Super simple and delicious. I grew all of my tomatoes and spent less than ten dollars on the chilies and onions. Over all, I am very pleased to now have 16 pints of this homemade goodness on my shelf. It will be used in so many of our favorite meals!
I hope you give this a try and I hope you love it!
DISCLAIMER: This recipe is one of my own originals. I researched salsa recipes to determine the amounts of the vegetables and the acid as well as the processing time. If you choose to can this recipe, you do so at your own risk. We had no problems. If you are new to canning, please research before attempting.
Happy Canning!

Thank you so much 😊
THANK YOU!! Anyone told you you have great voice? You should go into radio or voice overs.
Thank you. Mostly I have had more than not tell me my voice annoys them.
Website is not working?
@@DV-ol7vt sorry about that. I’m working on it. Server trouble
I always come back to your recipe. None better! I like onions in mine and this was the first year I got my hands on Hatch chilies! 🤗 TFS
Thank you for sharing your video and recipe! Love cooking with Ro-tel. ☺️
I learn so much from you Noreen! Thank you!!
I am so very happy to find this recipie...I'm in Oregon and grew up eating Ro-Tel.....muchas gracias!
This looks fabulous! Can't wait to try this. Thanks
This is the best recipe I've ever tried thank you so much we love it
Love love love ❤️ this. We go through so much rotel. I put it so many meals. We go through 3 to 4 cans a week (large family) you know this just hit the top of my canning list. Thank you.
I enjoy your videos. You have such a comforting way of speaking and your food is real.
Thank you Noreen, Great Job went and Bought stuff and now going to make mine. Love watching you make wonderful recipes. Bye for now and take care. :)
Will be trining these this year. Lots of great tips that I didn’t know. Thanks for the great video.
I'm a Canadian and have been using Rotel for years. Thanks for the recipe.
I miss ur cooking different types of meals and homemade breads. I am a good cook but I enjoy watching others make the same foods in different ways it gives u new ideas when we share.
How can you miss my cooking? I upload between three and seven cooking videos a week! You may want to try checking to see if you are subscribed. It is summer time and baking bread is kind of a hot job so I don't do it that often. With fall coming on, there will be more baking. Stay tuned.
I love all your videos Noreen you rock!!!
I have made this recipe twice now. I love this recipe!
Love to make my salsa with this combo and garlic!
My mac & cheese always has a center layer
of RoTel. Love your video's. Hi Rick!
Thanks for the tip about lemons. I did not know that!
This is my favorite recipe! I learned how to can starting wirh this recipe! So delicious!!
I’m going to give this a go!
Thank you for sharing 👍
I'm so glad you shared this recipe. I had been racking my brain to figure out how to make Ro Tel as this is something that is used lots buy our family in Chili, Cheese Dip and just about anything we use tomatoes in. I've never been happy with the off brains and this will be a big money saver to our 3 households. Enjoy your channel and the canning and hopefully next year I will have a pressure canner and attempt more things if I can get past the fear of the thing. Thanks for all you do.
I'm a Texas native and we have had Rotel all of my life! The original & mild are my "go-to's". These are great for pot of beans, Mexican rice, chili, a base for hot sauces, spicy spaghetties (when one can not afford to make or buy Italian sausages), burrito meat bases, baked/roasted potato chunks, Southwest corn breads/muffins, for when you make 'stoups' (not quite a stew and not quite a soup), etc. The mild is really good for queso. Just add milk and cheese of your liking. It's most commonly used in Velveeta. Now, I have been eating hot for most of my adult life and I can tell you that I can not handle the spicy flavor. I taught myself how to cook and Rotel was a staple, because we could not afford fresh veggies. I was cooking on $35 a month. Lots of beans and rice and...Rotel! Thank you for this video. It hits home!
YES because hot tastes like they only added cheap salsa to the mix. Trust me if they made actually spicy Rotel with its original flavor. Then it would be hot all the way.
I like your tea towel. Thanks for the video
Love it!
Thanks Noreen. Great tutorial :-)
thank you so much...we love using Ro-tel around here for our cheese dips..
Ty Noreen! Looks very yummy
I love this idea! A couple of things I have learned about Tattler lids is that you do tighten the rings when you take them out of the canner. Also, you can write on the lids with a magic marker and then take it off we polish remover. I have done it several times.
I used a combo of poblano and bell peppers and 1/2 beefsteaks and small tomatoes. This is what I grew this year. It does have more liquid but has a great flavor. I
Your recipe is a staple in my pantry. I use this for extending spaghetti sauces, chili, veg soup, and it delicious instead of water in rice.
Great video, can’t wait to make my own.
I made some and I used Serrano pepper’s and they came out with a lot of flavor
Great tip!
Hi Noreen well I made it, and turned out Wonderful !! thanks for all you do. Love your Videos. :)
Was gifted huge box of tomatoes. Giving your recipe a try. I have been using tattler for about a year. You can write in Sharpe on them. You use a fresh Sharpe swipe across and wipe off old writing, you can also use denture cleaning tablets to remove Sharpe and other stains like tomato.
Ohh Noreen..I have made my very 1st batch of Ro-tel using your recipe and it came out FANTASTIC!!!
I have never canned anything before. Thank you for this recipe. I made 11 pints
Omg all the veggies are so pretty 😍
Love rotel, I can't wait to try this. PS, I grew Anaheim's in my garden this year and as you said they are not hot, maybe I notch above a green bell.
Thanks I'm going to gather my tomatoes and try this weekend!
Been looking for a good sounding RoTel recipe and yours fits the bill so will be making this soon. My garden is coming in slow but have a lot of Romas planted and using them to make some salsa this week. Thanks for the RoTel recipe.
looks great!
Texan here. I go through several cans a week. I haven't made my own before. Thanks!
Thank you, I was going to the store to buy some Rotel for a pasta salad I wasn't looking for this recipe but I just grabbed my tablet & this came up in my recommended videos! Also, I made your strawberry cheesecake ice cream, its much better than the popular store bought brands! Rotel is sold in different varieties where I live, my sister likes the cilantro and lime flavor. And you are right, it is available nationwide.
Lady I ❤ your still in the game I have been looking for a recipe like this thank
Thank you for explaining about the tomato skins.
hi hi noreen...!!! ro-tel is so good LOL you are right it can be used for anything.... cant go wrong with it...!!!!
Looks good!
great idea! I love rotel! I'm also very particular about scraping everything out of the bowl.. :D
Very informative, I enjoyed your video !!
Very good video. Thank you
looks so good THANKS
Thanks another way to can some tomatoes. I have some tomatoes waiting for me for tomorrow. I am going to make this.
Thank you for this!!!
I made this and it was definitely good stuff... One jar left in the cellar!
Thank you for answering me, I think your fantastic, and I bet your family thinks they have gone to heaven every time you cook for them.
My family does not consider me to be anything special. This is how they have always eaten. The same way I did growing up. Thank you for your kind comments.
looks simple enough. and delicious. Rotel is big n Wisconsin for the last 20:years.
Hi Noreen, Phew am I glad I'm not the only obsessive one about scraping the bowl lol. I watch all the cooking shows on tv and on YT and I see all the waste because they don't scrape the bowl lol. I'm pretty sure I have OCD in the kitchen hehehe. Never heard of this in Australia but I want to make some for pizzas, chilli etc. Michelle
Noreen
We are using the last canned Rotel from last year... This is the best recipe and let me tell you it makes the best Spanish rice !!! Thank you for the recipe can't wait to cann more !! Store bought just isn't the same !!
I love me some Ro*tel! I like to use it on plain pasta and add a little cheese when the pasta is still hot.
Thanks for the info!
Very nice recipe. I only had bell peppers from my garden and it was still great.
High Five from Texas! Wooh this looks great!!
Thank you so much and thanks for the comment!
I had the same idea this year. I grew anaheims for the sole purpose of making home made Rotel without all BPA in the can.
Thanks for sharing Noreen! Rotel is a big deal in my family. However we always buy it premade. We will try this recipe for sure!
I have bought Rotel for over 40 years in the South in the winter, and the North in the summer, great idea, I buy the mild, and use it with a can of petite diced tomatoes because I cannot have the heat, but I love the flavor.
Thank you for sharing. I’m trying it right now. Stay safe from the hurricane
Think I’m leaving to many tomato seeds but I’m going with it.
I did this recipe last fall and fixing to do it again. It’s awesome!! I just can’t remember the process time
My hubby loves Ro tel we live in Ohio on the ohio wv border and we use ro tel for everything.but my hubby loves ghost peppers and habanero;s I will try them this way. Thanks for the video.
I'm in WV.
.. I live just on this side of the ohio wv bridge in Moundsville. So hello neighbor. 🙂
NOTHING better than Hatch chiles! Coming from NM I literally have to put them in everything. I'm definitely trying this when chile is in season this year.
I went looking for a rotel canning recipe and I found yours. You recorded this before I subscribed so I miss this. I will try this for sure
UMM, this is why I love you!, I need to sleep, but I can't stop watching your videos. You are a bad influence lol
Been there
I am way behind, just found your channel I am going to do this, looks yummy!
We don't have the access of buying Rotel here off the store shelves. Great to know how to make this. Thanks a lot
Thank you! That's good to know!
My fave way to use Rotell cook bit of garlic in dab of olive oil pop in jar or can of Rotell and add it to some cooked long grain rice. Super simple delicious Mexican rice. My mom always used peppers, onions and stewed tomatoes in Mexican rice growing up so I just found way to simplify it. Lol also garlic I think adds bit of freshness to the veggies. Thought I'd share!!!
This sounds like something my kids would love. TY

OMG Noreen I saw the posting on Facebook and I have been waiting all afternoon for this. Thank you so very much. Love to the family.
From UK 🇬🇧 never heard of this. 🙋🏻♀️
Not surprising it is a regional American treat
@@noreenskitchenchannel Ah, no wonder. Thanks 🙋🏻♀️
I bet this is so much better for you than the can. I can’t do canned food anymore. Thanks for sharing.
I hope I have enough tomatoes and peppers to make this. So excited.
Very popular in Louisiana..I make some every year
Noreen, you can use a china marker ....wax marker... on the lids and it will wash off when you wash the lid.
Teresa
Great idea! Good old China marker! I forget about those.
hey Noreen you should re-post this! I used this recipe last year and we had never had Rotel nor did I know what it was, but I sure love it!!!
I like your towels. Cute...
Love this! I will definitely be canning this up this summer! Any new canning videos coming up???
Hatch is the BEST!!!
Thanks noreen ..
love this one, FYI if your lids are a plastic you can still use a sharpie on them just wipe it off with rubbing alcohol when you clean them.
I am going to make this. Love the video. And where did you buy your towel it is so cute.
That looks amazing Noreen! I might try it using Mexibells. Ever heard of them? I hadn't before, but grew them this year and we love them!
hi noreen, just saw that you are in north carolina, so am i. i have a cousin that lives in new bern. i really do enjoy your videos, love to watch them. keep up the good work
YUM!!!
I'm a yankee, I never heard of it , but it looks real good, kinda like salsa.
I want to try this so bad! Looks very tasty! Your the best:-)
My tomatoes didn't turn out very good this summer...
Awesome presentation.
About the Tattler, you need to tighten the lids after it come out of water bath. That’s the rule.
That is for the NEW Tattlers. Not the version I used in this video which is older than the new Tattlers.
I am in the process of making this right now. The only substitution i did was add jalapeños without the seeds, since those are my husbands favorite
Hi! This is fantastic. Did all the chopping yesterday and made this this morning. Excellent recipe. So much better than what’s at the store. I used Anaheim peppers also and just a couple bell peppers that I didn’t know what to do with from our garden. Thank you very much!!
love, love ro-tel ! thanks 4 sharing ur recipe with us . have a great evening .
You probably already know this Noreen But after you take your TATTLER’s out you have to crank down that lid as tight as you can. If you didn’t do that step that might explain why two of them did not seal ❤️🙏❤️. Thanks for the great video and hope you end up loving the TATTLER’s as much as I do
Thank you dear♥️
Beautiful result! Great recipe. I don't suppose those new covers ping?
Wow now I can make Rotel I live in Mexico and can't buy Rotel so yes my own
This is delicious! I've canned it twice. I also have added Italian seasoning! Thanks Noreen!!
yum love them hatch chilies I know people say its just a normal chili but...........
Have you tried a Vis-a-vis marker? It’s a marker teachers used to use on overhead projectors that wipes off with water.
