Recipe
24 c cored, peeled, and diced tomatoes
1-3/4 c + 2T peppers, any combination you like
Chilis are the traditional peppers used.
3/4 c onion (You can use this amount in peppers if
you don't want to use onions.)
2-1/2 - 4 T sugar
3 t. canning salt
1 T bottled lemon juice per pint
Mix the tomatoes, peppers, onions, sugar, and salt in a large pan. Bring to a boil. Turn the heat down, and simmer the ingredients for 10 minutes. Add 1 tablespoon of bottled lemon juice to each jar. Using a slotted spoon, fill the jars to 1 inch headspace. Laddle juice into jar if needed to 1 inch headspace. Remove the air bubbles, and wipe the rim of the jars before sealing. Place the jars into a warm pressure canner. After venting, process the jars for 15 minutes for pints or 20 minutes for quarts @10 psi. Make sure to make appropriate adjustments for your altitude.
I keep telling myself I don't need any more canning jars, and yet again I find another recipe to can. This looks great!
Hahaha! I've given up on telling myself that! Every time I do, I find myself with one or two more case in my cart! 😆 Those tomatoes are delicious! We had a jar the other night and used what was leftover in a soup. If you want them hot, though, I recommend using more hot peppers than sweet peppers or leaving some of the seeds and ribs or both! 😁 Mine didn't have any heat when they were done.
Glad you can use the peppers 🌶
🥰🥰🥰
Thank you! 🌷
You are very welcome! 😊
Looks good !
Thank you!
Why did you use lemon juice if you're pressure canning? I didn't think you had to.
I don't think it is required if you are pressure canning, but I like my tomatoes to have an acidic flavor, not sweet. I don't always add it (I canned plain heirloom tomatoes without adding it and using the water bath method for years), but I have found in the last few years that I like the flavor, especially if my tomatoes are sweet. I figured with these having other ingredients, it wasn't going to hurt anything, so why not? ☺️
