There is no better way to start than to make this homemade pineapple jam, which goes so well with pineapple tarts, a MUST have Chinese New Year cookie!
    Although time consuming, making your very own pineapple jam is definitely worth the time, as the store bought pineapple jam usually lacked pineapple flavour and are always sweetened with too much sugar. The fresh pineapples, on the other hand, smell heavenly and taste so delicious when made into jams.

    Thanks for sharing your recipe, was wondering why lemon juice ; can we omit lemon juice and add less sugar ? Or lemon juice helps preserve the jam better like vinegar .?

      Yes, lemon juice acts as natural preservative to make the jam last longer.

    Hi, after cooking the pineapple jam, how Long must I refrigerate it before moulding them? If i can't get unripe pineapples, can I get all ripe ones? Also, with the same amount of pineapples I use, can I add lesser sugar? Thanks!

      其实看个人口味。很多食谱说用无盐牛油味道会比较香,但我个人觉得用有盐牛油烤出来的香味比较浓郁,比较美味。

      意思是凤梨的熟度,选2粒完全熟与3粒半熟的凤梨,总共用5粒凤梨 :)

    You Cook 5 pineapple filling will to sweet or not. i like less sweet.
    5 pineapple is enough for 80 pieces.

      Should not be too sweet as I used 2 half ripe pineapples and 3 ripe ones. Shouls have excess after making the tarts. Can keep in clean conditioner and refrigerate in fridge.

      +Lisa Lim Perhaps you must have used unripe pineapples which were not matured sufficiently to exude its distinctive flavor. Perhaps u want to mix and cook it with a really ripe pineapple to bring out the flavor.

      +Evelyn Wen yes, it very flavorful. But dont add in one go, do it in batches. Otherwise, it will take a long while to cook. Enjoy!

      +cook kieu should be fine although can be quite messy when cinnamon powder instead of cinnamon stick is used. Thanks for viewing.
