I found this channel when I was in the 6th grade and the first video which watched was the recipe of a wholesome chicken curry. I was immediately hitched to the channel and proceeded to know more about the owners (Insiya di) of the channel with whom I happen to share my alma mater. I am in the 12th grade now and over years, this channel has been a constant source of blissful recreation in my life as I battled pressure on the academic forefront. I discovered my own love for cooking and this channel still remains my happy place after all this time.
I made this today and it was simple and delicious. I obviously (for someone in the US) didn't have the eggplant of the type used in the recipe, so I used the regular Indian baingan available here, although I suspect that Thai eggplant might also work. I cooked the eggplant in the air fryer as opposed to deep frying. The sauce was delicious but I will reduce the sugar the next time I make this. I loved the silky texture of the sauce. I also made the bhaja masala per your recipe. This one is a winner and I am now inspired to try other "doi" type recipes from you guys. Thanks as always for the precise measurements and your attention to detail.

Interesting variation; the Odisa variant has a simple tempering of curry leaves, dried red chilly, cumin and mustard seeds; a dash of roasted cumin and dried chilly powder to finish off. The lightly flavoured and watery curd gives it the subtlety.
