- Murgir jhol or Bengali chicken curry recipe: Jhol refers to the runniest form of sauce in Bengali cooking. This chicken curry recipe is all about freshness of ingredients. It does away with everything but the essential. There is no tempering the oil with whole spices, no tomatoes and green chillies, none of the usual spices such as coriander and cumin, and no garnishing with coriander leaves. Which means that the few ingredients that do go in have to be fresh if you would like to achieve the best results.
Ideally, the chicken should be purchased from the market the same day, never frozen. The whole bird should not weigh more than 2 kg, about 1.7 kg after dressing. The meat should be bone-in, of course, preferably from the legs and thighs and not only from the breast. Necks, stomachs, livers and heads are good too.
The chilli paste is freshly ground along with a generous quantity of garlic and a little ginger. The quantity of onions is much less than what would be normally used. This is intentional. Avoid the temptation to use too much onion in this recipe. Because there is not enough onions or spices to give the gravy a body, when the water is added the emulsion breaks and the oil rises to the top giving it its signature red colour.
The yoghurt adds some acidity, but can be skipped too. The whole spices used are ground fresh in a sheel nora right before being added to the korai at the very end. The effect is very different from adding whole spices in the beginning of the cooking process. Finally, we like to finish with a drizzle of a good pungent, unrefined mustard oil. This is an optional step, but one we recommend you try at least once.

I just cooked this curry and had my dinner with roti and rice... I'm from Andhra.... Trust me this is the most delicious curry I have ever tasted.... It go so good with both rice and roti... Bengali cuisine has most delicious food and they know how to cook food tasty!

I like fiery Bengali food. Terribly miss my neighbour's food. She and her husband were excellent cooks. Not only their food, I also miss their beautiful daughter who was my classmate. Fell in love with her but I couldn't muster enough courage to tell her about my feelings for her 😁 Still misses her to this day.
She is married now and lives in Bern, Switzerland.

But its a request to check the grading of the plastic used which you will find below the bottle inside a triangle. Only grade 1 & 5 should be used for food.. 5 being the Tupperware quality.

Speaking as a Bangladeshi (not Bengali), we do not usually add sweetener to curry. However, personally I find adding just a little bit of sugar into the onion caramelizes it, and brings out the flavor without making the dish sweet, so I only use it in a tiny amount while frying the onions. Hope this helps if you like your curry savory and spicy, but also want to enhance the flavor of the onion🤗

I knew you would make any simple recipe unique with a twist. But this is the first time, I'm seeing Insya(don't know the meaning, yet) is using a flat mortar and pestle. Which are an iconic symbol of Bengali kitchen.
Actually used everywhere in India. In south India, MH, Gujrat, Rajasthan. It's an Indian kitchen thing.

This cooking technique is used a lot in Maharashtra as well, and the bright red, spicy oil that rises to the top of the curry is called "Tarri" (with all the rrrrr's that you can add while pronouncing!!)

Use kashmiri mirch only if u want it to be lesser spicy
This recipe will not be that much jhal bcz yougurt will absorb all the spicy ness
It will be spicy..in Bengal jhal= spicy
Try Kashmiri red chilli n take out the seeds b then soak it. Seeds will add more jhaal
If you are a bit scared about the spiciness.... Replace all chillies with Kashmiri red chillies and please remove the seeds before soaking. If you can source Mathania chillies (a special kind of dried red chilli of Rajasthan).. Use them.. They have less seeds and not very spicy(some people say its actually sweet).

I also do onions first.
Whatever ingredient you put first in the oil will dominate the dish's smell. So if like the ginger garlic flavour more then you could do it this way. And we generally fry onion first as it takes more time to cook than ginger garlic.

Ami ekhane motei kono bhul dhorchhina baa onnyo kichhu, amader barite erokom bhaabe hoy shetai ami just share korechhi. Tel er moddhye chilli paste diye onek ranna hoye ebong tremendously tasty hoy. Toh ei poddhoti ta dekhe ami nijei ekbaar ebhabe ranna kore dekhbo. Ekhane hype er byapar ta ami theek bujhlamna. Gosh ! The entire experience of watching the video makes me go hungry even after I had my dinner. The clarity, visual representation and gentle sound of ingredients getting chopped is just so different as compared to other channels. Would you mind sharing the soundtrack of your videos.
